Kananga- Kirlailile Mooga Upkari/ Sweet Potato Sprouted Green Gram Bhaji.


“Kananga- Kirlailile Mooga Upkari/ Sweet Potato Sprouted Green Gram Bhaji” … a simple upkari/ bhaji/ stir fry prepared with root tuber and sprouts both of which are good for health … a tasty side dish that can be served with pova chutney/ pova usli/ poori/ dosa/ parathas or just as it is for dinner/ snack …. Yummilicious …..

** In olden days simple upkari as a side dish was must during meals in every Konkani Saraswat GSB home and I grew up relishing them as in my paternal home. As generations pass by either because of ignorance/ laziness/ financial conditions/ lack of time/ change of lifestyle, have all led to exclusion of so many important dishes in our meal patterns. We are somehow always in a rush doing so many work at the same time that it is physically not possible to prepare everything, everytime, everyday especially in cities where the life is so fast paced. That is the very reason we are suffering from health related issues.

** There is nothing new I am mentioning here and deep within we all know the reasons for it too, each having their own, but the present pandemic condition has given us such a bad jolt that we are all now trying to slow down enjoy life more by eating good food, exercising and taking moderate workload. When all of us became prisoners at home with plenty of time to think and having to depend on self for all otherwise outsourced work, our mind too began to think and realize that there is more to life than just rushing about without aim. We have now begun to appreciate our ancestors lifestyle and trying hard to go back to roots.

** If you are one of them then go for a veggie as side dish during every meal all you need to do is some planning and involve all into sharing workload at home. In the past 2 yrs almost in every home family has learned to appreciate each other’s work effort and pitch in help without hesitation whatever be the work. Life at least to me has become easier and beautiful and yes, much more meaningful these days. Coming to food, sweet potatoes are considered to be much better than potatoes, so make that change, so are sprouts, their protein level just increase in abundance when done so and are tasty too, so go for these often.


** Here is my simple concocted recipe of “Kananga- Kirlailile Mooga Upkari/ Sweet Potato Sprouted Green Gram Bhaji” … that tastes wonderful served with parathas … My style …

** I have used one heaped cup of kirlailele moong (sprouted green gram) for this recipe. Put them in a colander, rinse under running water and keep it aside for the water to drain off.

** Note : For Sprouting of Green Gram/ Moong, I am sure you are aware of the method but if new to it, then check out the link shared at the bottom of this recipe.

** Peel off the skin of 150 gms or one medium sized sweet potato (Kananga/ ratalu). Cut them into medium sized cubes and immediately soak them in bowl with plenty of water till needed. Soaking them in water prevents them being discolored, so plz. do so.

** Heat 1- 2 tblsp oil (tel/ tela) in a thick bottomed kadai/ pan, when hot add 1 tsp mustard seeds (rai/ sasam), when they begin to splutter, lower the heat and add 3-4 red chilly cut to pieces (kumte mirsanga/ byadgi mirchi), 8-10 fresh curry leaves (kadipatta/ karbevu) along with ½ to 1 tsp of hing (asafoetida) powder, ¼ tsp of turmeric (haldi) powder and fry for a few seconds. Do not raise the heat or the turmeric will get burnt, so be careful.

** Drain off water from cubed sweet potato, rinse under clean water and add it into kadai along with sprouted moong, ¼ cup of water and mix well. Cook on high heat for a few minutes, stir well, then lower the heat to minimum and cook covered till 80% done. Add in salt (namak/ meeta) to taste and mix well. When about 90% cooked, add 2-3 tblsp of freshly grated coconut (soyi/ nariyal),mix well, cover and cook for 2 mins and its done.

** “Kananga- Kirlailile Mooga Upkari/ Sweet Potato Sprouted Green Gram Bhaji” is done and ready to be served. You can serve this as side dish with any dish of your choice. Goes very well with parathas/ poha / pova chutney, dosa, poori, chapati etc. I served this for my Upwas meal along with parathas, chutney, fresh curds and it tasted wonderful. Do try out this option with sweet potato for a change and enjoy with your family and friends.
