"Dal Fry with Moong/ Green Gram Dal” ... tastes awesome when served with Pulav / Roti / Poori or even Rice … prepared this for today's lunch ... Yummilicious ...
** Dal Fry is a must at least a few times when my Mom comes over to stay as she loves it very much to relish with roti/parathas. I prepare this with different dals / lentils and though I prepare it most of the time with masoor dal, I also prepare it with moong dal with lots of garlic and onions as seasoning. I have posted a few types of dal fry before which is similar in making to as this one. Do try out this delicious dal that is sure to go well with your family and friends. ** Here is my simple recipe for "Dal Fry with Moong/ Green Gram Dal” ... My Style ....
** Ingredients :
Moong Dal/Green Gram Dal : 2 cups.
Garlic : 12-15 cloves peeled and cut to fine pieces.
Onion : 2 medium sized.
Tomato : 1 large or 2 small.
Green Chillies : 6-8 Cut into small pieces.
Haldi / Turmeric Powder : ½ tsp
Hing/Asafoetida Powder : ½ tsp
Jeera / Cumin Seeds Powder : 1 tsp
Coriander Leaves : ¼ cup finely chopped
Oil : 2 tblsp
Ghee/Toop : 1 tblsp
Salt to taste.
** Wash the moong dal and put it in a pressure cooker with enough water. The level of the water should be an inch above the moong dal. Cover with the lid and cook on medium flame to 3-4 whistles. Remove and keep aside. Let the pressure cooker cool completely on its own. Once the pressure drop open the lid gently and keep this ready aside.
** Peel off the skin and chop one onion very finely and the other into slightly bigger cuts and keep them separately aside. Also, wash and cut the tomato into small cubes and keep this also ready aside.
** Now add the oil and ghee in a thick bottomed kadai. When hot lower the heat to medium and add in the garlic and fry for a few seconds, then add in the finely chopped one onion and fry both together till they become light brownish in color, now add in the other onion cut into slightly bigger pieces and and continue frying till they turn light brownish translucent.
** Now add in the curry leaves, chopped green chillies, haldi pd, hing pd, jeera pd and fry for a minute on low heat. Add the chopped the tomatoes and mix well. Cook for 2-3 minutes on slow heat. Immediately add in the cooked moong dal along with salt to taste and mix well. Add water in about a cup of water, more if necessary and mix well, there should be no lumps and the consistency of the dal should be thick.
** Bring to boil on medium heat, stirring often to avoid the dal getting stuck or burnt at the bottom. When you see bubbles appearing on the surface, mix well, check thickness and add more water if necessary, cover with a lid and cook on low heat for about 5-7 minutes. The tomatoes will have cooked by now, do not overcook the tomatoes or let it go mushy. Garnish the dal with finely chopped coriander leaves and remove from fire. Cover and leave it aside for 15 mins. for the flavors to seep in and it is done.
** "Dal Fry with Moong/Green Gram Dal” is done and ready to be served. Serve it steaming hot with any dish as an accompaniment of your choice. Goes well with Roti/ Poori/ Rice/ Paratha/ Pulav. This is really a tasty dish with the awesome flavor of garlic. Do try it out this monsoon season and enjoy with your family and friends. Best consumed on the same day as re-heating the dal many times makes it loose the texture and freshly cooked taste.
