"Hara Pav Bhaji" ... Everybody is familiar with Mumbaikars fav. Pav Bhaji, a tasty~delicious snack loaded with butter, available on every street corner ... here is Tuesday's No Onion-No Garlic bhaji prepared by me using more of seasonal greens giving it a healthier twist ... Go ahead and enjoy this with Pav ... It tastes Yumz .....
** Pav Bhaji is a worldwide famous Mumbai fast food that is great to relish with Mumbai pav / bread. The dish has made a prominent place in Mumbaikar’s heart and of other too, just like the other dish ie. Paani Poori. These two snacks are the most sought after street foods though many new are now cropping up, but Pav Bhaji always has a place of its own and will do so as it is a filling dish loved by young and old alike. I have already written about Pav Bhaji with my own variation of addition of methi leaves before and this dish too is in similar lines, the only variation being that I have added on a little more of greens. I have increased the amount of fresh methi leaves along with increase in both green peas and coriander leaves as you can observe by the greenish tinge the bhaji has. I have not added in any onions and garlic to this bhaji but you may do so if you wish.
** I have often come across No Onion-No Garlic dishes, which are a common in some of the Konkani Saraswat dishes. These dishes are prepared during fasting or on days you want to avoid them for what so ever reason you wish. I had also come across Jain Pav-Bhaji which is our normal pav bhaji but without onion and garlic. I have always wanted to try it out on upwas or No-Onion No-Garlic day myself and today being Tuesday, I though why not give it a try. I must admit the difference does come across and addition of onion and garlic does give an added bonus taste to the bhaji, but this dish too tastes great, also you can add them and prepare the bhaji too. Do try this one out if you love methi leaves like me and enjoy them with pav or bread whichever is available to you in your vicinity. Tastes awesome and is healthier too.
** Here is my method of preparing “Hara Pav Bhaji” … My Style …
** Ingredients Veggies :
Methi / Fenugreek Leaves : 2 heaped cups.
Green Peas / Vatana : 3 cups
Potatoes / Batata / Aloo : 3 large sized.
Cauliflower / Pool Gobhi : 200 gms florets
Tomatoes : 8 medium sized.
** Other Ingredients required :
Ghee / Toop : 3 tblsp
Oil : 2 tblsp
Kashmiri red Chilly powder : 2 tsp
Pav Bhaji Masala Powder : 3-4 tsp
Amchur / Dried Raw Mango Powder : ½ tsp
Salt to taste.
Butter / Loni : 50-70 gms
Lemon Wedges : As required.
Coriander Leaves / Kottambari Pallo / Dhania : 1 cup + Handful for garnishing finely chopped.
** Pick up only the fresh Methi / Fenugreek leaves, discard the stem portion. Chop finely and wash in plenty of water. Squeeze out as much water as possible and keep it ready aside. You can also add in a little bit of salt, mix well, rest for 10 minutes then squeeze out the water, this will remove bitterness from the leaves. I have used them as it is.
** Shell, wash, drain and keep ready about green peas. Wash and grate finely the cauliflower florets. Peel the skin of potatoes, wash and cut them into pieces. Wash and chop tomatoes to small pieces. Keep them all ready aside.
** In a pressure cooker pan add in the chopped potatoes, green peas, grated cauliflower, chopped methi leaves and tomatoes as mentioned each in a layer on top of each other. Add in 1 cup or as required amount of water and cover with the lid. Pressure cook on medium heat till 3-4 whistles.
** Remove and keep it aside to cool. Once the pressure drops gently open the lid and allow to cool for 5 minutes. Now with the help of a potato masher keep mashing all the ingredients together till they are mashed properly and and mixed well.
** In a large thick bottomed kadai, add in ghee and oil, when hot lower the heat and then add in kashmiri red chilly powder and pav bhaji masala powder (any brand available in the market will do. I used Everest), fry for a second and immediately add in all the cooked and mashed ingredients little by little into the kadai, mixing well to prevent the masala getting burnt or getting spluttered.
** Once it has been heated well, add in amchur powder (Optional), Coriander leaves keeping aside some for garnishing, salt to taste and water if required and mix well. Cook on medium heat for a good 15-20 minutes stirring and mixing often. Lastly add in the butter and mix well. Keep stirring and if it thickens too much you can add in water at intervals.
** “Hara Pav Bhaji” is done and ready to be served. Serve it piping hot with a generous blob of amul butter (or any of your choice), some finely chopped coriander leaves and a piece of lemon wedge. This bhaji is usually served with Pav a soft bread very famous in Mumbai, though now it is available in most of the metro cities if not you can serve it with any bread of your choice too
** Addition of fresh methi leaves, more of green peas and generous amount of coriander leaves is the twist I have given here which gives it the green tinge, hence I have named it Hara Pav Bhaji. This is a healthy twist by which you can make children eat greens which they are otherwise reluctant to, specially with methi leaves as they are bitter in taste. But when prepared this way they are not at all bitter and taste equally good.
** You can also cut down on the amount of addition of ghee, oil or butter portions, but that is exactly what give pav bhaji the added taste and I recommend addition of the same, though if you want to avoid it for health reasons you may do so. You can also add butter only for the kidds later while serving and avoid the addition into the curry.
** Again, for the amount of Ingredients added on the spice level is required and does not turn out too spicy. I have added Kashmiri chilly powder, for both color and it is less spicier, if you are adding in any other powder, please use your own judgement on spice level and do so lest the bhaji turns too spicy.
