"Sweet~Spicy~ Chano- Kananga Upkari/ Bengal Gram- Sweet Potato Bhaji" ... chane upkari is usually prepared either with addition of raw banana/harve kele or batato/ potato but I love to have this with kananga, tastes awesome, the same can be prepared with Kabuli chana too ... Yummilicious .....
** Chane Upkari as we call in Konkani is a simple and famous upkari among GSB Konkani Saraswats, usually prepared with black chana along with raw banana that is served at many functions. You can prepare the upkari / bhaji using either black or white chana and I have posted a few versions of them before. In my home we cook this many times as we love chana upkari specially during fasting period as it is allowed for consumption. Though raw banana is preferred by many with the black chana I have many a times prepared them either with potato or sweet potato. As a little bit of jaggery can be added to the bhaji sweet potato when added on tastes very delicious. The added bonus being that sweet potato has immense health benefits and is better than potato so one must add this on into your daily diet and enjoy the same. For today fast I prepared this upkari/bhaji with Black Chana ie whole Bengal gram along with sweet potatoes, exactly the way we love it in my home. Do try this version and enjoy with you family and friends.
** Here is my simple method of preparing "Sweet~Spicy~ Chano- Kananga Upkari/ Bengal Gram- Sweet Potato Bhaji" …. My Style ......
** Wash and soak 2 cups of Black chana / whole Bengal Gram overnight in plenty of water.
** Next morning wash and rinse the chana well and pressure cook with enough water to 3-4 whistles. The level of the water should be about 1 inch above the ingredients in the cooker. When the pressure drops remove and keep aside.
** Peel off the skin of about 200 gms or one medium sized sweet potato. Cut them into medium sized cubes and keep them soaked in water aside. Soaking in water is done to prevent them from turning black.
** Heat 2 tblsp oil in a thick bottomed kadai, when hot add 1 tsp mustard seeds (rai / sasam). When they begin to splutter add 5-6 red chilly cut to pieces, 8-10 freshy curry leaves, 1 tsp of hing powder and fry for a few seconds.
** Add in the cubed sweet potato along with some of the chana cooked water and mix well. Bring to a boil and then lower the heat and cook covered till 80% done.
** Now add in about 50-70 gms of grated jaggery / gud / goda, salt to taste and the cooked black chana along with the water also that in which it was cooked. Mix well and bring to a boil. Lower the heat, cover and cook till done and dry. You may lastly garnish the upkari with freshly grated coconut gratings.
** Note : If a little bit of water remains on cooking it is ok, it will dry up on cooling too. Also if there is more pressure cooked chana water, do not add in all the water. You may retain the water and prepare rasam or saar out of the same. Add in only that much cooked water how much is necessary for the upkari to get cooked.
** "Sweet~Spicy~ Chano- Kananga Upkari/ Bengal Gram- Sweet Potato Bhaji" is done and ready to be served. You can serve this with any dish of your choice. Goes very well with poha / pova chutney, dosa, poori, chapatti, spiced rice, millets etc. Do try out this delicious simple chana recipe and enjoy them with your family and friends, it is supposed to be very good for health.
