Tutti Frutti Vanilla Flavored Mangalore Buns (Banana Poori).


"Tutti Frutti Vanilla Flavored Mangalore Buns (Banana Poori)" ... Finally my dream got accomplished ... had been in mind for some time now ... the buns turned out simply delicious, fluffy, sweet and soft ... The recipe is that of our very own Amchi Buns that is an iconic delicacy found only in and around Mangalore … I just tried them out today with a gentle twist today ... A sweet treat for all my friends on "Independence Day" ... Thank you Friends you all make me want to do that much more …. 

** I have already written in detail about all the goodness off the wonderful snack / poori called Buns that is a proud dish, or should I say an iconic delicacy found only in and around Mangalore. Konkani Saraswats all round the globe are fully aware of these delicious deep fried snack prepared using ripe bananas. Every child, every teenager, every elderly person loves this snack and relishes it with their own combos. I will not run much into details of the buns but will share a link to the same of the original and traditional recipe to the Buns famously known as Mangalore Buns. I have made many variations or lets say given many twists to this awesome buns and prepared in many combos too and have posted them before. ** Coming to today’s "Tutti Frutti Vanilla Flavored Mangalore Buns (Banana Poori)", this twist had come quite some months back in my mind when I had prepared some cake and the tutti frutti I bought was in excess. However, due to eye surgery, I could not try them out then and the after care from the same took up some time. Being busy all the time, I somehow forgot completely about tutti frutti and it was a few weeks before Independence Day that when I cleaned my refrigerator I came across them stored to be prepared later on. They were in excellent condition and I then decided it was high time I tried out the buns. Therefore, here is the lovely beautiful Buns for all my friends who have made life so lively and fun that I am never able to thank them enough. Thanks to all my Konkani Delicacies Friends, you people simply rock … Stay Blessed. 

** Here is the method of preparing "Tutti Frutti Vanilla Flavored Mangalore Buns (Banana Poori)" .... 

** Ingredients : 
Maida/All purpose flour (APF) : As per requirement say 3-4 cups (approximate). 
Overripe Bananas : 3 if ellaichi (small one’s) or 2 medium sized if any other variety. 
Sour Curds / Dahi : 1 cup 
Sugar / Shakkar : 6-8 tbsp 
Salt : ½ tsp 
Baking Soda : ½ tsp
Cooking Soda : ½ tsp 
Vanilla Essence : 1 tblsp 
Yellow Color : a pinch 
Tutti Frutti : ¼ cup. 
Oil : 1 tblsp 

** Refined Oil : for deep frying 

** In a large flat / wide bowl add in the sour curds, bananas, sugar, salt, cooking soda and mix to a smooth mixture. The sugar should be dissolved properly. Now add in the yellow color and the essence and mix well. 

** To this mixture add in enough of maida say about 2 cups and mix well to form a dough, keep adding and kneading the maida to the batter till you get a smooth elastic dough. If the dough is still sticky add in some more maida and knead well. The dough should be smooth, soft and elastic in its consistency. 

** Note : The amount of maida to be added really depends upon the mixture prepared with curds and banana as the curds one adds in may have less/more content of water in it. So also the texture of the banana. So do not add in the maida at one go as you may end up adding in more. As you bind the dough you will be aware if it needs in more maida depending upon its stickiness. 

** Once you get a smooth dough that does not stick to your hands rub the dough all over with 1 tblsp of oil (any edible oil will do), cover with a tight lid and keep it away overnight or for about 6-8 hours. See to it that the oil has evenly covered the dough, lest it may dry out on top. 

** Next morning, knead the dough well again and divide them into golf sized balls. Keep them ready. Now roll them out into small poori add in about a tsp of tutti frutti in the center and roll it back into a smooth ball, so that the tutti frutti remains inside. Now roll it into a thick poori after dusting them with some maida, taking care to see that the tutti frutti does not come out. They should be rolled slightly thicker than the normal poori we make. At least ¼ inch in thickness. 


** Meanwhile heat a thick bottomed kadai with plenty of oil for deep frying. When the oil comes to smoking point, lower the heat to medium and wait for 4-5 minutes before you add in the pooris. Take care to see that the oil is not too hot or else the poori will cook from outside but not from within, as they are thicker in texture. 

** Now add in a rolled out poori and allow it to sizzle for few seconds before you press it with little pressure with a slotted ladle. This pressure applied helps the poori in fluffing up properly. Once slightly browned, flip over and let the top side be cooked till golden brown. Then once again overturn the poori and allow it to be golden on the first side too. 

** Remove on an absorbent paper for the excess oil to drain off. Continue with the remaining rolled out pooris with tutti frutti in similar way. If the kadai used is large in size or if you are using flat bottomed frying pan you can add in 3-4 poories at a time for frying. 

** "Tutti Frutti Vanilla Flavored Mangalore Buns (Banana Poori)" are done and ready to be served. You can serve them hot or at room temperature, they taste equally good. The normal buns are sometimes served with Dalitoy or chutney, this particular tutti frutti buns can be relished as it as they are sweet and full of vanilla flavor, just like the bread buns we get in the stores. 

** I am sure children will love this version of buns much more than the normal ones, do try them out and let me know, response to posts always encourage me to do that much more also it motivates me to improvise on my dishes. You can send these buns in tiffin / lunch box to children and carry them also during train journey as they are very tasty to eat to fill the boredom of travelling. Enjoy them with your family and friends. 

** Note : 
** Addition of sugar is upto individual taste. You can add or decrease as per your liking. 

** Roll out the poori 3-4 only at a time and deep fry them side by side later on. If you roll out in one go, the top surface of the rolled puri dries up and may not get puffed on properly. 

** The size of the poori and the thickness also once again depends upon individual liking, I make it medium sized. You can roll out a little bit larger too. Also so make it a little bit more thicker say about 1/3 inch …. So do try out a few and then continue as per your liking. 

** Oil should be just hot enough for deep frying and not smoking point. Remember the porries are rolled out thick and they should get cooked from within too. Very hot oil will brown the poories immediately and not cook them from within.
