Bhenda~Jola Upkari / Lady's Finger~Sweet Corn Bhaji.


"Simple and Healthy Bhenda~Jola Upkari / Lady's Finger~Sweet Corn Bhaji" ... tried my own combo of bhendi with corn and I must say it tastes delicious … goes very well with dal chawal or saar too .... Yummy Yumz ... 

** A simple healthy and delicious bhaji / upkari prepared using tender Bhenda / Lady’s Finger and Jolu / Sweet Corns. I love adding of simple upkari to meal times in the noon. It fills in the stomach and is that much more nutritious. We get lots of sweet corn in the market, ready for use by corn separated and packed. It is that much easier to prepare it as the tedious work has been solved. Today for a change, I decided to make my own combo of bhaji with these two veggies and I must say it was super duper in taste. 


** Here is the simple recipe for the delicious upkari / baji …. My Style … 

** You will need about 200 gms of lady’s finger / bhendi and 1 heaped cup of sweet corn kernels. 

** Wash and pat the bhendi dry. Slice off the edges and cut them lengthwise into 4 slices then cut them horizontally to about 2 inches in length. Wash and drain the corn kernels. Keep both ready before starting the preparation of bhaji. 

** In a thick bottomed kadai, add in 1 tblsp of oil, when hot add in 1 tsp of mustard seeds (sasam/rai), when they begin to splutter add in 2-3 red chillies, cut into bits (+/- as per your taste), add in a large pinch of hing (asafoetida) and few curry leaves. Fry for a few seconds and then add in both the sliced bhendi and the sweet corn kernels. Mix the vegetables well on medium heat for a minute or two, then lower the heat to minimum, cover with a lid and cook till almost done. Add in salt to taste, mix well and cook till done. 

** "Simple and Healthy Bhenda~Jola Upkari / Lady's Finger~Sweet Corn Bhaji" is done and ready to be served. Serve this as a side dish during meals along with other dishes. Tastes awesome, children will love the crunchy taste. Do try this and enjoy with your family and friends.
