** Upkari / Bhaji / Stir Fried Veggies, is a simple dish served along with other main dishes. This dry seasoned dish is prepared almost in every Konkani Saraswat home. It is surprising to note that when the whole world is going ga ga now on stir-fried veggies our ancestors had already introduced it into our daily diet ages back. Sometimes, It really disheartens me to note that Konkani Cuisine being so healthy lacked proper promotion worldwide, so stayed back behind closed doors unaware to the people round the world. Here is simple Cabbage Onion Upkari that is delicious, healthy and nutritious.
** This is a simple bhaji, sort of stir fried veggie that goes very well as a side dish with Dalitoy (Dal) – Rice. Most of the dishes that come into popularity are most of the time available in our very own kitchens. Upkari with simple seasoning of mustard~chillies~curry leaves is a traditional and old method in our homes, considered very healthy and easy to be prepared. Our ancestors saw to it that one upkari / bhaji of any veggie did accompany our full meal. This side dish always occupied a place in the thali then and now too. So go ahead and enjoy the benefit of this simple Upkari.
** It was a real surprise to me that I missed posting this simple upkari over 3 years of blogging. It was only today when I decided that I should change the pictures of old recipes as those days I neither got the time to edit not click pictures properly. In addition, I was not very well versed with blogging. However, I found that cabbage upkari with ginger was added of which I will give the link below, but somehow this simple upkari never was. It was really surprising that the upkari I prepare almost on monthly basis was never blogged. So, here is the simple recipe, that you can relish quite often as it is not only healthy but light on stomach and good for those who want to lose some weight too. This upkari is almost nil in calories, so can be had to in larger quantities to fill your tummy.
Ingredients :
Cabbage : 250 gms.
Onions : 2 large sized.
Coconut : Freshly grated 1 tblsp (Optional)
For Tempering :
Oil : 1 tblsp
Mustard Seeds / Rai / Sasam : 1 tsp
Green Chillies : 4-5
Hing / Asafoetida Powder : 1 tsp
Curry Leaves : 6-8
** Chop the cabbage, rinse in a colander, and allow all the water to drain away. Keep this aside ready.
** Peel off the skin of onions and chop them also finely. Keep this ready aside too.
** Heat oil in a thick bottomed kadai, when hot add in mustard seeds (rai / sasam). When they begin splutter add in chillies cut into pieces, fry a bit. Now add in the hing and curry leaves. Fry for a few seconds.
** Add in the onions and continue frying on medium heat till they are a little bit translucent. Finally add in the cabbage leaves and mix all well. Lower the heat add salt to taste. Mix well, cover with a tight lid and cook on low flame in it’s own steam till almost done.
** Note: Upkari / Bhaji does not need the addition of water. Sprinkle some water only if you find it absolutely necessary. Most of the time the rinsed water that clings to the veggie is enough for cooking. Also vegetables leave out water of their own which is more than enough for cooking. Keep the heat very low and cover with dome lid and the steam within is enough for the same. However, some root veggies do need a little bit of water to be sprinkled. So be careful while adding water, lest the upkari will become mushy which is not at all pleasing to the palate.
** Note ~ This is Optional : Add in freshly grated coconut to the upkari / bhaji and mix well. Cover and cook till done. I avoid using coconut, you may if you desire. Traditional upkari were always prepared with the addition of coconut as garnish but recently for health reason, people have started avoiding the same. So this is entirely your choice.
** “Simple Cabbage ~ Onion Upkari / Bhaji” is done and ready to be serve. Serve hot as a side dish with Dalitoy and Rice or as an accompaniment to any dish of your choice. You can prepare upkari / bhaji in same method by and large of most veggies too. Trust me it’s very healthy and nutritious and off course easy to do too. Make it a habit to always include a Upkari in your daily diet for healthier lifestyle.
