Sagle Ambe Sasam (Whole Ripe Mango Curry).


“Sagle Ambe Sasam (Whole Ripe Mango Curry)” … Sasam is a delicious mildly spiced sweet side dish often prepared when ripe mangoes are in season by GSB Konkani Saraswat’s … the same can be prepared with other fruits or in combo too like “Avnas- Ambe Sasam (Pineapple- Ripe Mango Curry)” which is the most sought after ... I have tried plenty of combos and you will find them in my Blog. … here is a simple one prepared with whole medium sized ripe mangoes … try it, tastes awesome served as a side dish during meals …. Yummilicious .....

** I have shared "Sasam" in different combos and each time I must say it was relished with pleasure by my family and friends. Sasam prepared with fruits is always a mildly spiced sweet curry served as a side dish with meals. I will be sharing a common link to all “sasam” recipes shared by me in this blog at the bottom of this link, you can browse through the same for more options and try them out as and when you find the right ingredients or that which appeals to your family. This particular sasam is prepared with small sized whole ripe mangoes dunked in mustard based coconut masala. However, in Mumbai, it’s difficult to get the right type of mangoes used for this particular curry, so one has no option but to use any available. No issues, do try it, either way it tastes great.

** Here is my recipe for “Sagle Ambe Sasam (Whole Ripe Mango Curry)” … my style, try it; tastes awesome …

** I used about 6 medium sized ripe mangoes/ ambo for this recipe, you may prepare with any amount of mangoes needed.

** Wash the mangoes well and wipe the dry. Now peel off the outer skin and add into a bowl along with 1 cup of water. Squeeze out the skin well with hands using the little water to obtain as much as the juicy flavoured water as possible. Remove and discard the mango peels. Now add the peeled mangoes and gently squeeze just the uppermost fleshy portion of the ripe mangoes into the same collected water as possible while retaining the mangoes whole. Add the whole mangoes into a separate vessel.

** Add the collected mango water into a mixer grinder and blend for a few minutes, remove and strain through a fine sieve and keep it aside ready. I follow this procedure to avoid the thread like fleshy portions from the ripe mangoes being added to the curry which is not only distastefully but messy to eat also.

** Now add 1 cup of freshly grated coconut gratings (soyi/ nariyal) into a mixer grinder along with 2-3 less spicy green chillies (tarni mirsanga/ hari mirchi), a small marble sized piece of tamaring (chinchama/ imly) and grind to a smooth paste. You can use the collected mango water here for grinding. When ground and done add ½ tsp of mustard seeds (sasam/ rai) and further grind for just 1 minute or so for the mustard to be just about blended with the masala, do not over do the same lest it turns bitter.

** Note : You can add dry red chilly instead of green chillies while grinding too. Also, if the ripe mangoes are sour in taste then add tamarind accordingly or just skip it. However, consider preparing this dish with sweet ripe mangoes only.

** Add the ground masala to the whole ripe mangoes in the vessel. Add salt (namak/ meeta) to taste and about 3-4 tblsp of grated/ powdered jaggery (goda/ gud/ bella) along with the remaining collected ripe mango skins washed water and mix well until the jaggery has blended and mixed in well with the curry.

** Note : This dish needs to be served right away without keeping it aside to rest as it may turn sour and inedible if done so. In case you need to serve it later then store it immediately in fridge and remove 15 minutes just before serving. However, I must mention here that it tastes best when served fresh on preparation.

** “Sagle Ambe Sasam (Whole Ripe Mango Curry)” is done and ready to be served. Tastes best served immediately fresh on preparation at room temperature as a side dish during meals along with other items. Prepare this with small sized ripe mangoes and enjoy with family and friends, tastes fantastic.
