“Naivedyam: Kirlailele Mooga Godi Khichidi (Green Gram Sprouts Sweet Pongal)” … sweet khichidi is a delicacy from GSB Konkani Saraswat Cuisine usually prepared with addition of rice/ rava on festive occasions as an offering to God … this is a simple sweet dish prepared with green gram sprouts, lots of freshly grated soyi/ coconut, sweetened with jaggery, flavored with cardamom and a generous helping of homemade cow's ghee … that's all, do try it; tastes awesome served with any dosa of your choice … Yummilicious …
** Khichidi Polo is a dish often prepared during the month of Marghashira/ Dhanurmasa that falls somewhere during the month of December. I could not prepare any this time due to some personal issues and later with passing of my dear Amma, I lost all desire to prepare any dishes and three months passed off just like that. Life moves on and with time, we need to get back to work holding memories close to heart.
** Amma loved Godi Khichidi very much, so decided to prepare some today with green gram sprouts as Naivedyam to God. We relished it as it is though I would have loved to try pairing it with dosa, maybe next time for sure. If you browse through my Blog you will come across a few combo’s of Khichidi- Polo a combination of Sweet Khichidi/ Pongal served with dosa of one’s choice, it tastes awesome, try it.
** As for this recipe, I have kept it simple with only moong/ green gram sprouts cooked with jaggery and plenty of freshly grated coconut. And a generous helping of ghee and a flavor of cardamom is all that has gone into making of this awesome khichidi. Using sprouted moong is a matter of choice and you may use just soaked moong too, its just that I prefer the sprouts, that’s all, the taste does not differ much.
** Again, the color of the khichdi depends upon the jaggery used, the lighter the color, the lighter shade of khichidi, as I used dark color jaggery the color has turned out dark, again, the taste does not differ much. Do try this awesome khichidi, if you like sweet dishes or need to prepare any easy Naivedyam, children always love sweet dishes, so make it a habit to give them home cooked healthy ones.
** Here is my simple recipe for “Kirlailele Mooga Godi Khichidi (Green Gram Sprouts Sweet Pongal)” … my style ….
** Ingredients:
Green Gram Sprouts/ Kirlailele Moong (Moogu) : 4 cups
Coconut/ Soyi/ Nariyal/ Tenginakayi : 1.5 cups freshly grated (white part only)
Jaggery/ Goda/ Bella/ Gud : 2 to 2.5 cups grated/ powdered
Homemade Cow's Ghee/ Toop : 3+ 1 tblsp
Cashew Nut/ Kajjubi/ Kaju : 15-20 cut to pieces
Raisins/ Dry Grapes/ Kishmish/ Sukkale Draksha : 25
Cardamom/ Yellu/ Ellaichi Powder : ½ to 1 tsp
Pistachios : 10-12 cut to slivers
Pink Salt/ Sendha Namak/ Rock Salt : just a small pinch.
** For this recipe I have used “Green Gram Sprouts/ Kirlailele Moong (Moogu)” which is optional, you can use just soaked one’s too. Just wash and soak 1 heaped cup of green gram/ moong in plenty of water for 8-10 hours or overnight. Drain, rinse well under running water and it is ready to be cooked similar to sprout method.
** Important Note : The above measurements give a perfect balanced sweetness and richness to this awesome sweet khichidi, so please do not cut down on the amount of ghee, jaggery or coconut. However, if your family prefers much sweeter dish then you may increase the jaggery a little bit, though this one is perfect.
** Rinse “Green Gram Sprouts/ Kirlailele Moong (Moogu)” well under running water and add into a pressure cooker pan. Add sufficient water say an inch above the level of the sprouts and pressure cook on medium heat for 2-3 whistles. Remove and let the pressure in the cooker release on it’s own, keep it ready aside.
** Heat 3 tblsp Cow's ghee in a thick bottomed kadai, when hot add cashew nut pieces and fry until they are evenly fried to light brown, remove into a plate. Now add raisins and fry until they are evenly done, remove and add it to the cashew nut and keep them both aside ready. We will be using them later for garnishing.
** Now add grated/ powdered jaggery into the same thick bottomed kadai with just ½ cup of water and let cook stirring all the while until it melts. Add fresh soyi/ coconut gratings and mix well. Continue to cook on low to medium heat stirring often for about 4-5 minutes. The coconut should cook and dry out just a little bit.
** Note : In Mumbai we get good quality jaggery powder and jaggery blocks that are dust free which is easy to use. If not, then follow the method of straining the jaggery by first allowing it to melt in the water and then continue with recipe.
** Now add the pressure cooked green gram sprouts along with the water if any and mix well. Continue to cook stirring often to avoid being burnt until it thicken out well and there is no water leaving through the sides. Now remove from heat, add the sendha namak (Optional) and cardamom powder and mix well.
** Remove the prepared green gram sprouts khichidi from heat add another tablespoon of ghee and mix well. Now pour it into a serving dish, garnish with the fried cashew nut pieces- raisins and the pista cut to pieces and mix well. Let the sweet khichidi rest for 15-20 minutes for the flavors and texture to be settled in.
** “Kirlailele Mooga Godi Khichidi (Green Gram Sprouts Sweet Pongal)” is done and ready to be offered as Naivedyam to God and thereby distributed among family and friends. Tastes awesome served as it is or with any dosa of your choice.
