Tava Fried Bread Slice Toast with Shepu- Mooga Dali Usli/ Upkari (Dill Leaves- Green Gram Dal Bhaji)


“Tava Fried Bread Slice Toast with Shepu- Mooga Dali Usli/ Upkari (Dill Leaves- Green Gram Dal Bhaji)” … served with a tomato ketchup (store bought) … Mooga dali usli is a common dry bhaji from GSB Konkani Saraswat Cuisine to which I added on shepu/ dill leaves (shared a day back) … I have always enjoyed eating mooga dali usli with crispy fried bread slices from childhood … over the years I have adapted to preparing tava fried slices/ grilled sandwich etc. using the same and they all taste scrumptious … these crispy fried slices taste awesome and all you need is a little bit of ketchup to add on the zing … try it, its Yummilicious ….

** Mooga dali usli or Green Gram Dal bhaji is a common dish in GSB Konkani Saraswat community prepared for breakfast in combo with each ones preference. I written in detail many times in my posts on each dish recipe shared while prepared in variation. Here too I had prepared the Usli with addition of shepu/ dill leaves a day back (post shared earlier). As mentioned often I have always relished usli from childhood with fried bread slices or with poori and I love both combos. Serving with bread slices is easier especially if it is to be a home affair while poori is preferred in case of guests.

** Grilling bread slices/ sandwiches came much later with the introduction of electric grill toaster and prior to that I always applied mooga dali usli on crispy fired bread toast slices, that’s it I just enjoyed it as it is or with a little bit of tomato ketchup. When electric grill and sandwich makers came in market I was more than happy and till date I make it a point to buy them the minute I need to replace old ones. I confess I do not use them as much as I have done decades back as these days bread is tabbu, but them some taste buds just refuse to budge and I do enjoy them once in a while.

** I just tava fried bread slices applying a thin layer of the “Shepu- Mooga Dali Usli/ Upkari (Dill Leaves- Green Gram Dal Bhaji)” I had prepared a day earlier which I had made a point to keep aside some to prepare into sandwiches. I have used homemade cow’s ghee for frying the slices which is a habit I never compromise on, not only is ghee tastier but it is healthier than oil too, so go for it and enjoy. Growing up children need to eat healthy and sometimes we do need to think out of the box to lure them into eating homemade food rather than enjoy dishes from outside, try it, sure to be loved.

** Here is how I prepared “Tava Fried Bread Slice Toast with Shepu- Mooga Dali Usli/ Upkari (Dill Leaves- Green Gram Dal Bhaji)” … my style …


** I have used “Shepu- Mooga Dali Usli/ Upkari (Dill Leaves- Green Gram Dal Bhaji)” here for this recipe which I had prepared a day earlier for meals. I always prepare a little bit extra so that I can prepare these toasts/ sandwiches the following day. You may use any mooga dali usli/ green gram bhaji for these toasts. However, I am sharing link to the recipe at the bottom of this recipe, try it, tastes wonderful.

** To Prepare the Tava Fried Bread Slice Toasts .....

** Apply homemade cow’s ghee/ toop on one side of bread slices and place them on the hot tava, keeping the ghee applied slice below touching the tava. Apply ghee on the top side of the bread slices too. Once the bottom side of bread has been fired for 2-3 minutes, flip it over and with the help of spoon carefully spread a layer of the “Shepu- Mooga Dali Usli/ Upkari (Dill Leaves- Green Gram Dal Bhaji)” on top side.

** Note : I have used store bought Brown Bread slices, you may use any.

** When the bread slice is browned on the bottom side, sprinkle a few drops ghee/ toop on the applied bhaji side and gently flip it over on the hot tava. With the help of flat spatula press it down gently, this helps the bhaji to crisp out well on being fried. Continue to fry undisturbed on medium heat until the bhaji applied side too turns well done ie crispy. Check out the step by step pictures shared in collage above.

** Once done flip it over back again and then with the help of spatula or a sharp knife slice it into two to form triangles, then remove and place them on a serving plate You can cut them into squares or smaller pieces if desired too, however, this serves the purpose well. Now repeat the procedure as mentioned above with remaining slices of bread until the number of slices required and done and ready.

** “Tava Fried Bread Slice Toast with Shepu- Mooga Dali Usli/ Upkari (Dill Leaves- Green Gram Dal Bhaji)” is done and ready to be served. Tastes best served hot immediately from tava with some tomato ketchup. As the moong dal usli/ bhaji has enough spices included in it there is no need for any chutney to be served along with these toasts, however, if desired you may do so. Children are sure to love these toasts and you will be happy to have taken care on health aspects too. This is a lovely snack to be served for breakfast or as snack when guest drop by.
