“Mumbai Pav Sandwich with Shepu- Ambuli Chutney (Dill Leaves- Raw Mango Chutney)” … these soft, fluffy, eggless bread famously known as Mumbai Pav/ Ladi Pav is the lifeline for Mumbaikar’s and is always freshly sourced from local bakeries on daily basis … though these are largely associated as an accompaniment to Mumbai’s famous street food Vada Pav and Pav Bhaji, there are many more ways in which you can relish them … they are often enjoyed dunked in steaming hot Kadak Adraki Chai in the wee hours by many rushing out to work, while a few more enjoy it maska marke ie with spread of butter … in my home we love it prepared as sandwich; simple and tasty just with a liberal spread of any spicy coconut chutney along with thin slices of tomato- cucumber tucked in … love the crunch of each mouthful bite followed with a sip of strong ginger tea … Yummilicious …
** I have often mentioned about my love for sandwich from childhood and though these are prepared usually with bread slices, in Mumbai, I prepare them at times with Mumbai Pav/ Ladi Pav easily available in bakeries in every corner of the street or at your friendly neighborhood stores. I have more than a dozen combinations of sandwiches in my old diaries prepared over decades and though I want to share them more often somehow I fall short on my attempts, do excuse, will try to add on more frequently.
** I realize these days sandwiches have begun to be diminished with those warning bells we often come across on consumption of maida/ APF products. Millet breads are an better option to switch over to, however they are not available nearby to me and I am not good at baking, so I guess I will have stick to normal bread for now. I prepared these simple sandwiches with store bought Mumbai Pav/ Ladi Pav and they tasted awesome with the lovely Shepu- Ambuli Chutney (Dill Leaves- Raw Mango Chutney).
** Sandwiches are easy to prepare especially if you are keeping it simple with just application of chutney and a few veggies tucked in, I have even avoided adding ketchup here as the chutney by itself was so tasty that it needed really nothing more. I always prepare chutney in bulk and store it in several small stainless steel boxes in freezer as this helps me to remove only that much how much is necessary for breakfast. Just let it thaw to room temperature and its ready to be used, easy isn't it ????
** There is really no recipe as such for this “Mumbai Pav Sandwich with Shepu- Ambuli Chutney (Dill Leaves- Raw Mango Chutney)” … it’s just assembling of all ingredients together and serving immediately ....
** Always use fresh Mumbai Pav/ Ladi Pav/ Bread rolls for preparation of Sandwich for best of taste and for healthy breakfast.
** With a sharp knife slice each pav/ bread roll at the center halfway through keeping one side of the edge intact and keep it ready.
** Now apply a layer of butter on the inner side of the pav on both sides if desired only, you can skip addition of butter (I have not added). However, I must mention here that butter does enhance the taste of the sandwich.
** Now apply a thick layer of any sandwich chutney you prefer on the inner side of Mumbai pav/ ladhi pav. In case you have applied butter, then apply the chutney above it spread as a layer. Follow the same on all Pav’s.
** Wash, wipe dry and slice tomato into thin slices. Similarly peel off the outer skin of the cumber and also cut them into thin slices and keep them both ready aside. If desired you can add on slices of boiled potato or eggs too.
** Now place a slice of tomato and a slice of cucumber within the pav to which the chutney is applied and fold it over back to shape. Follow the same with required number of Pav’s to be served and keep them all ready.
** DO NOT PREPARE and keep sandwiches ready for more than a 5 minutes as there are chances of them turning soggy. Sandwiches are best served freshly prepared for best of taste, so please prepare how much is needed only.
** “Mumbai Pav Sandwich with Shepu- Ambuli Chutney (Dill Leaves- Raw Mango Chutney)” is done and ready to be served. Tastes best served as it is immediately at room temperature for breakfast along with kadak adraki chai (strong ginger tea) or filter coffee. I always prefer sandwiches for breakfast though you can serve it as a snack anytime of the day especially to guests who drop in for tea. These are easy to prepare, tummy filling, healthy sandwiches that are sure to be loved by all.
** As I mentioned above, I always make it a point to prepare coconut chutney of different varieties and store it in small container in fridge as it helps in serving them as and when needed. This time I had prepared “Shepu- Ambuli Chutney (Dill Leaves- Raw Mango Chutney)” and I used the same for sandwiches today. I had earlier served the same chutney with watermelon rind panpolo which I have already blogged and both tasted great. I did not serve any ketchup here, you may do so as children will love it. Try it, I am sure your family will love it and will empty the whole lot.
** And before the debate on good and bad of using bread begins, I would like to mention here that while I am all for home cooked meals but there are times when one needs to have some changes too. In my opinion, anything consumed in limits will not be of any harm. It is always better to include different varieties of mix and match of food into daily life routine to not only include all nutrients but to also make it habitual when in case of emergencies like when travelling etc. There are many more sandwiches that I prepare often which I will share soon, do keep a track of my blog for more.
