“Fresh Mango-Paneer Dessert topped with Raspberry Jelly Crystals and Vanilla Ice Cream” … there are plenty of dishes that can be prepared with fresh mangoes and Aapus Ambo (Alphonso Mango) gives best results when it comes to desserts … enjoy this simple dessert as it is/ topped with some jelly crystals/ any flavored Ice Cream … I have used store bought ice cream while rest of the dessert was prepared at home … a simple dessert to beat summer heat when plenty of mangoes are in season … tastes awesome served chilled ... Yummilicious ….
** In my home we are not very fond of sweet dishes, the very reason why my Blog has less sweet items, however, I do make it a point to try out those that I find simple and this one is one dessert that hardly takes any time if you have the ingredients ready. Off course making of paneer takes time, but you can use store bought ones too. I prepared from skimmed milk at home to which I will share the link at the bottom of this recipe. It’s the season of Aapus Ambo (Alphonso Mangoes) and we do get the best ones in Mumbai all the way brought and sold from Ratnagiri recognized worldwide for its quality.
** I must mention here that Vanilla Ice Cream used here is store bought (Amul Ice Cream) as I find it much more convenient, you can prepare it at home if desired too. I used Raspberry Jelly Crystal and followed the procedure mentioned on the packet. It’s very easy and I am sure all of you have at some point prepared it at home. It is best to prepare and store all the dessert items in fridge overnight to be served chilled for best in taste. Do try this out and enjoy with your family and friends, children love ice cream and you can lure them to eat this homemade dessert rather than outsourcing each time.
** Here is my simple recipe for “Fresh Mango-Paneer Dessert topped with Raspberry Jelly Crystals and Vanilla Ice Cream” … my style …
** Prepare any flavored Jelly of your choice by following instructions on the packet and refrigerate it overnight. I used Raspberry flavored Jelly Crystals.
** I prepared paneer using skimmed cow’s milk at home, the recipe of which you can find at the bottom of this recipe if needed. You can use fresh paneer from reliable milk vendors in your area too, in which case just rinse it gently with fresh water, then store it in a vessel with plenty of water till the time needed, it retains softness.
** Drain off all excess water from paneer and pat it dry with a kitchen towel. I have used about 200 gms of paneer for 2 medium sized mangoes. Add the paneer into a bowl and crumble it finely, this helps in getting a fine textured dessert.
** Wash, wipe dry and peel off the skin of 2 large sized good quality sweet fresh ripe mangoes. I used Aapus Ambo/ Alphonso Mango that’s in season now. Collect the pulp discarding the inner seed into a bowl and keep it ready aside.
** Add crumbled paneer in mixer grinder along with 3-4 tblsp of sugar (sakkar/ shakkar) and beat well to a smooth texture, mixing in between if needed. Now add mango pulp and blend all together to a very smooth and thick in consistency mixture.
** Only three ingredients ie. paneer, mango pulp and sugar is added to this mixture, do not add water/ extra milk as we need to keep the mixture thick. Add this into individual serving glasses depending upon the quantity you desire to serve.
** I served in the same glassware you see in the picture leaving a gap of ½ inch at the top as I wanted to add on jelly and ice cream which is optional, you can serve it as it is chilled too. In all I got about 4- ½ glasses of the thick mixture.
** As I mentioned above I did not bother to prepare ice cream at home and used Amul Vanilla Ice Cream. You can use any brand or any flavour of your choice, again you can prepare it at home too if you have the time to spare.
** After adding prepared Mango- Paneer Dessert in individual glasses, cover each glass with cling film or aluminium foil and let them rest in refrigerator to chill for atleast 12 hours for best results. I prepared it in the evening and served it next day mid morning, so that was a good 16-18 hours time that I refrigerated this dessert.
** To Serve: Remove the Mango- Paneer Dessert just before serving from fridge. Top it with a layer of prepared raspberry jelly, then top it with one scoop of Vanilla Ice Cream and garnish with a little bit of finely chopped almonds and pista.
** “Fresh Mango- Paneer Dessert topped with Raspberry Jelly Crystals and Vanilla Ice Cream” is ready to be served. Serve chilled immediately once it is assembled as mentioned above and enjoy with your family and friends. I know it sounds a little mood spoiling when I say this but do be careful when enjoying desserts, a little bit goes a long way in satisfying the sweet tooth, Isn’t it. No, I am not a spoils sport, but I must mention that this dessert is a little bit higher on calories so make it a point to relish it in limits without going overboard and if diabetic or asked to avoid sweets, then just a spoonful is enough for sure. Life is all about enjoying good food and health within limits.
