** Dates/ Khajoor as we all know are very nutritious, high in fiber fruit that is available fresh during season and in dry and dehydrated form all round the year. Though these are higher in calories they are considered great on scale of health benefits being natural sweeteners. Being high in Vit. B 6 it is believed it keeps once mood in great place.

** These are easy to consume and many types of dishes can be prepared with inclusion of dates. Dates are also used in dried form, powdered form or syrup form, as is one’s desire. For more information you can search on web or consult your Dr. or any nutritionist if you are in doubts or have any ailments or are on some medication.

** Dates/ Khajoor is always in stock at home, my father loved to soak them in melted ghee for a few days and then consume them and I still do so. I consider it a wonderful dessert after lunch and I always remember and thank aanu (dad) when I relish them, try it sometime, who knows you too may fall in love with its taste, its simply great.

** This time however I am posting a long due post of juice prepared out of fresh/ raw yellow dates/ khajoor available in season. These are available in red colored form too and have a unique taste of their own, sometimes sweet while at times slightly sour. They are crunchy having a sweet tinge and taste great n salads too.

** Preparing juice for the first time as we always ate them like a fruit as it is. Added on some ginger, rock salt, sabja, etc. along with a dash of lime and it tasted awesome. Now that I am intrigued with this fruit, let me see if I can come up with some more ideas of relishing them the konkani style of dishes, till then enjoy this juice chilled.

** Here is my simple recipe for “Fresh Yellow Dates (Khajoor) Juice topped with Sabja” … my style …

** Add about 1 tblsp of sabja seeds/sweet basil seeds in a cup of water. Cover and keep it aside covered for seeds to get soaked well and get swollen and turn mushy. It takes about 20-30 minutes, after which you can place the same in fridge so that it turns cold. Addition of sabja is optional and you may skip it if not desired.

** Wash 10-12 fresh/ raw yellow dates (khajoor), wipe dry and then cut them into small pieces discarding the inner seeds. Put this into a mixer grinder along with ½ inch piece of fresh ginger (alle’/ adrak), a small pieces say about ½ inch stick of of cinnamon (tike saal) and grind well adding about 1-2 cups of chilled water.

** Remove and strain through a fine sieve into a vessel. Add 2 cups of chilled water, ½ tsp of kala namak (rock salt), soaked sabja seeds, freshly squeezed juice of 2 large sized (lemon/ nimbu/ limbiyo) and mix well. I have not added any jaggery/ sugar to this juice, you may if desired depending upon the sweetness of dates.

** “Fresh Yellow Dates (Khajoor) Juice topped with Sabja” is done and ready to be served. Serve chilled along with some snacks on a summer or warm day or weekend to guests/ family/ friends and have a lovely time. You can prepare and place it in fridge a few hours ahead of serving too, that way it can be served well chilled.

** Always try out and serve fresh fruit juices that are local and in season. It is believed that nature has its own way of providing us with veggies and fruits appropriate for the season for nurturing of good health. Above all make it a habit with your family of having fresh juices and avoid store bought or packaged ones.
