Fresh Yellow Dates (Khajoor)- Cucumber (Taushe’)- Tomato Koshimbir (Salad).

** I have already mentioned what little I know about fresh raw dates/ khajoor in my previous post where in I shared a juice prepared by the same. You may just read over there or acquire more information on net as there is plenty of its pros and cons mentioned there. This fruit has somewhat a different sweet acidic taste depending actually on its cultivation. I mention so because each time I purchase them there is a slight difference in its taste, so I guess the sweetness depends on the same.

** However, one thing holds true that they are very crunchy when fresh and retain the same even when added on to salad preparations along with other veggies. I mentioned this before but will pen down again, that over decades we hardly purchased it and when we did, we just ate them as it is, just like a fruit. This is the first time I thought I must try out various dishes with it and after juice, my second attempt is of adding them on to simple salad and trust me it taste wonderful and can be relished as it is.

** Here is my simple recipe for “Fresh Yellow Dates (Khajoor)- Cucumber (Taushe’)- Tomato Koshimbir (Salad)” … my style …


** Wash well and wipe about 8-10 fresh yellow dates (khajoor). Slice off the end stem portion and then cut them into small squares discarding the inner seed. Check out the picture attached below for reference if need be.

** Peel off outer skin of one large or two small cucumber (taushe’/ khakdi) and cut them also into small cubes of the same size. Wash, wipe and cut one large or two small tomatoes similar in size and add all three together in a bowl.

** For Tempering/ Seasoning/ Pannaka : Heat 1 tsp of coconut oil (nariyal tel/ narlel tela), when hot add ½ tsp mustard seeds (sasam/ rai) when they splutter add 5-6 fresh curry leaves (karbevu/ kadipatta) and a large pinch of asafoetida (hing) powder, fry for few seconds and then add to ingredients in bowl.

** Add kala namak (rock salt) to taste along with a handful of finely chopped coriander leaves (dhania/ kottambari pallo) and freshly squeezed juice of one small lemon (nimboo/ limbiyo) and toss all the ingredients well.

** For spice level you have two choices here, you can either add coarsely ground black pepper (kali miri) powder just before serving which is what I did or you can add finely chopped green chillies (tarni mirsanga/ hari mirchi) too.

** “Fresh Yellow Dates (Khajoor)- Cucumber (Taushe’)- Tomato Koshimbir (Salad)” is done and ready to be served. This nutritious, delicious, crunchy salad can be relished as it is for dinner if you want to go light or are on diet.

** However you can also serve this as koshimbir/ salad along with other dishes for lunch. In all a very tasty crunchy salad that we loved very much, sure to try out more options using fresh dates, till then prepare and enjoy this one with family.

** Salad/ koshimbir in small amounts should always be included on regular basis in our diet as it plays an important role in building our health and immune system. Do make it a must in your lifestyle so that children build up this habit early in life.
