** Well, these days I am always on the lookout or trying something different that’s not only tasty but healthy too that can be served with roti/ chapathi/ parathas/ poori on fasting days for my one meal of the day. Sweet potato is a healthy tuber and these days I replace them often in place of potatoes. I have shared a side dish before with the same combo and almost in similar lines, here however I have used masala powder and added sweet potato pieces in place of grates. I will share the link to that recipe at the bottom of this recipe, you can check it out and try out the same too, it taste wonderful with a crunch of added groundnuts which children are sure to love, off course so will elders. Without writing much moving to the recipe, do try it out, it’s the season of Methi (Fenugreek) leaves and you all know its excellent health benefits.
** Here is my own recipe for “Kananga Methi Upkari (Sweet Potato Fenugreek Leaves Bhaji)” … My Style …
** Ingredients :
Sweet Potato/ Ratalu/ Kananga : 200- 250 gms.
Methi Leaves/ Fenugreek Leaves : 2 cups (leaves only)
Jaggery/ Gud/ Goda : 1 tblsp grated or powdered
Salt/ Namak/ Meeta : to taste
** For Tempering/ Seasoning/ Pannaka :
Oil/ Tela/ Tel : 1 tblsp.
Ghee/ Toop : 1 tsp
Mustard Seeds/ Rai/ Sasam : 1 tsp
Jeera/ Cumin Seeds : 1 tsp
Curry Leaves/ Kadipatta/ Karbevu : a few fresh ones
Hing/ Asafoetida Powder : 1 tsp
Haldi/ Turmeric Powder : ½ tsp
Malvani Masala Powder : 1 tblsp
Goda Masala Powder : 1 tsp
** Chop the methi leaves. Wash under running water and squeeze out as much water as possible from the methi leaves. Keep this ready aside.
** Note : You can also, Apply a little bit of salt to the methi leaves and rub it all over and leave aside for 10 minutes. Squeeze of the water from methi leaves properly, wash and keep this aside ready. This is done to remove the bitterness from methi leaves. You can leave out this step and just wash and keep the leaves ready if liked. I personally do not follow the salt method as I strongly believe that it should be consumed as it is for its awesome health properties. You may choose any method.
** Wash, slice or peel off the outer skin of sweet potato and cut into ½ inch sized cubes. Immediately soak it in water till ready to be cooked to avoid discoloring.
** To prepare the Stir Fry/ Bhaji/ Upkari : Heat oil + ghee in a thick bottomed kadai. When hot, add Mustard seeds, when they begin to splutter lower the heat and add jeera seeds, curry leaves and fry for a second or two.
** Add in hing powder, haldi powder, goda masala powder, malvani masala powder, stir fry for a second or two and then add drained methi leaves, drained sweet potato cubes, little bit of water if necessary, mix well and cook covered till half done.
** Note : Here I have used Goda Masala Powder and Malvani Masala Powder, which is readily available in all stores in Mumbai. However, if not you can use 1/2 tsp of garam masala powder in place of goda masala and any spiced masala powder like pav bhaji, chole, curry masala powder in place of malvani masala powder too in suitable portions of your liking.
** Add jaggery, salt to taste, mix well, cover and cook until done. The sweet potato should be cooked soft but not too mushy, by then methi leaves too will have cooked well and the dry masala and leaves should just coat the sweet potato.
** Remove and keep the bhaji covered aside for 10 minutes and it is ready to be served. If you find it too dry while serving, just sprinkle 1-2 tblsp of hot water, mix well and serve. This is a dry side dish as shown in the picture and tastes great with roti.
** “Kananga Methi Upkari (Sweet Potato Fenugreek Leaves Bhaji)” is now done and ready to be served. This dish tastes delicious when served with chapati/ roti/ poori or parathas. Try this out if you follow upwas/ fasting or you can just enjoy the same as and when it pleases you too. Your family is sure to love this bhaji for sure. Surprise them next time serving it along with hot plain/ multigrain poories.
