"Nendra Banana Jamun/ Jamoon (Nendrabale Kele in Sugar Syrup)" ... why should gulab jamun have all the fun; isn't it??? there are equally tastier and healthier dishes that can be easily prepared and relished in similarity ... here is a delicious sweet dish that Amma used to prepare for evening tiffin for us siblings to relish when we came home tired from school ... it did pep up our mood for that mundane task of homework ... tastes awesome when served cold ... Yummilicious ...
** Nendrabale kele / bananas are available in plenty in the southern parts of India, though it is now available almost all round the world. Luckily its available in plenty in Mumbai to my joy as I love to prepare dishes from it. The most famous from GSB Konkani Saraswat Cusine is kele halvo (halwa), the taste of something is which cannot be explained, you really need to relish it to know. Again, these are steamed and served during breakfast/ snack or can be prepared into bajias, both of which are loved by all.
** The only hitch about this banana is it is not consumed as it is unlike other ripe bananas as It is not easily digested. While raw one's are used widely in preparation of wafers/ banana chips the same is also used in preparation of dishes. I am sharing a common link to dishes I prepared with using this banana at the bottom of this recipe, you may browse through the same and try them out in leisure, they are all tasty. However, do try out this recipe of bananas in sugar syrup as children are sure to love them.
** Here is my simple recipe for "Nendra Banana Jamun/ Jamoon (Nendrabale Kele in Sugar Syrup)" .... which I learnt from my Amma ...
** For preparing the sugar syrup : Prepare syrup of one thread consistency with 1 cup of sugar (shakkar/ sakkara) to which 1.5 cups of water is added and boiled till done. Once it comes to boil add a pinch of saffron (kesar) and ½ tsp of cardamom (ellacihi/ yellu) powder, mix well, remove from heat and keep it aside.
** Take 2 ripe nendrabale kele (Banana) and cut them into three equal pieces horizontally after cutting off its edges, then cut these 3 pieces vertically into 2/3 pieces depending upon its thickness. Here I got about 6 pieces of each Banana.
** Frying of the Banana Pieces : The banana pieces are usually deep fried in Ghee (Toop) and then soaked in sugar syrup. But here i have Microwaved the bananas for two minutes with the skin on and then fried them with 1 tblsp of ghee on a non stick pan as it is much more healthier than deep frying.
** I have microwaved the bananas as it will take less time to fry them later on. However, this step is optional, you may either shallow fry, deep fry or tava fry depending upon your choice. You can also deep fry them in ghee if you wish.
** My Method : Heat a non stick/ or any other pan with 1-2 tblsp of ghee/ toop, when hot peel off the outer skin of the cut banana pieces and place them in pan and fry on both sides on medium heat for 5-10 minutes till 80% done. You may repeat the same process in case you have to fry more banana pieces.
** Remove and immediately add in to the sugar syrup which is still warm enough. Let cool to room temperature and then keep it in the fridge to served cold as it tastes best that way. However, if desired you may enjoy them hot too.
** "Nendra Banana Jamun/ Jamoon (Nendrabale Kele in Sugar Syrup)" is done and ready to be served. Tastes best served cold or at room temperature as a dessert or as it is for evening breaks. You can also top it with a spoon of beaten cream if desired, tastes great, sort of children's favorite way of relishing.
** Do try this out during festive season as you can prepare them previous day and keep it in the fridge and serve the next day. Just see to it that you sightly heat the same while serving if you find that the ghee has solidified due to cold temperature.
** There are many more recipes like steaming, bajia, podi, sweets, halwa, gojju prepared out of "Nendrabale Kele (Banana)" shared in the Blog which you can browse through the common link shared below ...
