Bhendi (Lady Finger) and Raw Mango Bhaji.... served with Phulkas.............
Wash and wipe dry 250 gms of Bhendi / ladies finger. Cut off both end sides and cut them into two pieces horizontally if they are larger in size. If small just cut out the edges. Now slit them lengthwise into 4 pieces each. Prepare all bhendi similarly and keep them aside.
Peel of the skin and slice 2 onions lengthwise finely. Wash and wipe one medium sized not very sour raw mango and cut them into strips.
In the same kadai add another tsp of oil, when hot, add the sliced onion and fry till light brown. Lower the heat to minimum. Add in the cut bhendi and mix well, cover and cook when half done add in the mango strips and mix well. Cover and cook till all are cooked to 80%. Now add ½ tsp haldi powder, 1 tsp red chilli powder, 2-3 tsp of goda masala powder, pinch of fennel seeds powder, salt to taste and mix well.
Cover and cook for a few minutes. Add 1 small tomato pureed to this and mix well. Add the fried cashews too. Cover and cook till done. Serve hot with Phulkas/ Chapatis.
