Carrot, Gherkins, Potato and Onion Upkari / Bhaji.........
Wash and cut 10-12 gherkins / tendle each vertically into six pieces. Peel and cut one large sized carrot similarly ie. Lengthwise pieces of about 3 inchs. Peel and cut one large potato also similarly. The vegetables should look even in their cuttings for the upkari / bhaji to look good as well as cook evenly. Peel and slice thinly two onions lengthwise.
Put the vegetables (carrot, potato and gherkins) in a collander and wash under running water well. Drain and keep it aside ready.
Heat 1-2 tblsp of oil (any refined oil) in a thick bottomed kadai, when hot add 1 tsp of rai (sasam), when they splutter, lower heat and add in 2-3 red chillies cut into pieces, 5-7 curry leaves and ½ tsp of hing powder.
Mix well, then add in the sliced onions and fry for a few minutes. Add the vegetables and salt to taste. Mix well, sprinkle some water if necessary and cook covered till done.
Serve hot with Dal Chawal / Roti as an side dish.
** Note:
You can microwave the washed and drained vegetables on high for 4-5 minutes and then add to the fried onions on kadai. This enables the cooking to be done faster and the vegetables will remain crunchier. I have followed the microwave method. You can choose either method.
