Aamras / Sweetened Mango Puree.

Aamras / Sweetened Mango Puree ........ relished mostly with Poori ........

Aamras is made with sweet ripe mangoes, mostly with Alphonso variety, famous for its texture, sweetness and taste. It is rightly justified and called the king of fruits. Aamras prepared from mangoes is actually sweet mango pulp either with or without sugar added to it depending upon its sweetness. During summer month’s it is the season of mangoes. There are many varieties of mangoes available and many items are also prepared with them like sweets, roti, poori, burfi, payas, jams, Ice creams etc. I have included many mango recipes, but Aamras has a place of its own in everyone’s heart, be it young or old alike.

Aamras is the most loved dish in our family. My mother likes aamras very much as she is very fond of mangoes. We can have aamras as it is or serve it with poori. Aamras Poori is a must and a running item at marriages during the period of mango season.

Method : Peel off the skin of 2-3 large sized fully ripe Alphonso Mangoes. Remove all the pulp (as much as possible) and put it in a mixer. Add about 1 cup of sugar (plus or minus depending upon the sweetness of the sugar) and grind into a very smooth puree. Remove the puree / aamras into a bowl and put it in the fridge to cool.

Serve chilled Aamras with hot fluffy Poori and watch children and elders both enjoy.
