“My Delicious Veg. Thali No~ 458 : Tava Fried Pagila Podi (Spine Gourd fries), Avanasa- Ambo- Dalimba Sasam (Pineapple- Ripe Mango- Pomegranate Curry), French Beans Upkari/ Bhaji, Dalitoy (Spiced Tuvar Dal), SheetHa (Rice)” … for Amchigele’s, monsoon is an eagerly awaited season as it’s a time to celebrate many festive occasions along with a spectacular variety of rare, seasonal items like pagila, ambado, keerlu, taikilo, haldi paan, tere paana etc. that only appear in the markets now, bringing about a deliciously spoiled- for- choice of menu … all dishes in my today’s thali here are from our own GSB Konkani Saraswat Cuisine … simple, nevertheless excellent in taste … do try it and enjoy with family and friends; tastes awesome … Yummilicious …

** Monsoon is indeed a "spoilt for choice" season, as the rains inspire a massive variety of comfort foods, ranging from crispy, deep-fried snacks to hearty, warming curries, variety of sweet dishes and broths. The season also brings in a bounty of fresh, seasonal ingredients and we GSB Konkani Saraswat always wait for these veggies all through the year to be prepared~ relished throughout the season.

** One of those veggies is pagila (spine gourd) which is available only during monsoon and everybody is eager to purchase them. There are plenty of recipes that can be prepared using them, however the tastiest of them all is simple podi/ fries; fried crisp they taste fantastic and when served during meals one really does not need anything else. Here I have tava fried them, you can deep fry/ air fry them too.

** "Avnas- Ambe- Sasam" is a mildly sweet- spicy traditional delicacy prepared in summer when ripe mangoes, grapes and pineapple are available in plenty. This dish is a favourite in community and is served at most functions including festivals. This time I failed to prepare it in time but then nature has its own way of granting wishes. Here it is all done with a small twist of addition of dalimb and it tastes fantastic.
