"Kaju-Narla Godu Rosu/ Harshala (Sweet Fresh Cashew Apple Fruit- Coconut Milk) served with Homemade Tandla Shevai (Rice Idiyappam/ String Hoppers)” ... I have often tried giving a small twist to our very own godu narla roslu/ harshala (jaggery sweetened fresh coconut milk), a traditional dish from GSB Konkani Sarasawat Cuisine with addition of fresh fruit puree … after strawberries this time tried with kaju phala (cashew apple fruit) that are now available in plenty ... tastes delicious served chilled with shevai/ poha dunked in it … Yummilicious …
** Shevai or Sevaiyan are also known as Idiyappam in southern parts of India and as string hoppers elsewhere round the globe. These are prepared fresh or with sun dried ones depending upon the requirement for that particular dish. Rice shevai is a common dish served for breakfast in GSB Konkani Saraswat homes served topped with coconut oil and any side dish like pickle, molaga podi, chutney or spicy gravy dishes. One of the most favorite and in demand combo is with batate songa (spicy potato curry) another famous traditional amchi dish. The combo is awesome one and is a hit in all homes while non-vegetarians also love it with some spicy chicken or fish curries too.
** However, when served for breakfast it is often also preferred to be relished with godu narala rosu (jaggery sweetened freshly extracted coconut milk) and I have posted the same before. Again, I have also written a whole article on shevai/ idiyappam with explanation, the very reason why I will not repeat the same all over here again and just share link to it at the bottom of this recipe. Shevai can be prepared with both ukda (boiled rice) rice and normal surti kolam rice or in combo of both rice too, again it can be prepared with many other types of millets too.
** Godu narla rosu as called in Konkani is actually jaggery sweetened coconut milk which is prepared in most of the GSB Konkani Saraswat homes, in which fruits or shevai are dunked in to be served as a dessert after lunch. It is also referred to as Harshala when served along with thin textured poha/ pova/ beaten rice/ avalakki another famous combination often relished as a meal when you want to avoid heavy food. I have often loved giving a small twist to our own traditional dishes to enhance taste while keeping the basics intact. My experiments have turned out successful more than 90% of the time and it includes narla rosulu with addition of pulps of seasonal sweet flavoured fruits.
** In my culinary journey I have tried out many like ripe mango, ripe jackfruit, muskmelon etc. while the most successful one was with strawberries, which was in full demand among my friends. I have tried with plenty flavours successfully, all written in my old diaries (7 in all), a period before my blogging days. I am eager to prepare them again to be shared here but somehow I am not able to cope up with time. There are so many dishes I would like to add but my back and neck issues do not permit me to do so. This line is not for sympathy but for giving hope and courage to all like me to get going without falling prey to small issues, life is beautiful, to those who want to move on with hope.
** Shevai/ idiyappam can be served in many ways, like with chutney, curries, sambar, upma ie tempered, with churan (a jaggery- coconut mixture) etc. I hardly prepare Jaggery sweetened coconut milk, as we prefer it with spicy dishes but as I had purchased plenty of kaju fruits, thought of trying the same and here is it is. I served it in two combinations, the first was with rice shevai and the second combo was with poha/ beaten rice and both of them taste great in their own way as per individual preference. The next time you prepare Shevai prepare this delicious creamy sweet coconut milk with fresh cashew fruits when in season and enjoy as a dessert with your family and friends.
** Here is my recipe for “Kaju- Narla Godu Rosu/ Harshala (Sweet Fresh Cashew Apple Fruit- Coconut Milk)” … My Style ….
** Ingredients :
Fresh Kaju phala/ Cashew Apple Fruit : 2-3 large sized.
Fresh Thick Coconut Milk/ Narla Rosu/ Nariyal Doodh : 200-300 ml.
Fresh Thin Coconut Milk/ Narla Rosu/ Nariyal Doodh : 2 cups (approximately)
Jaggery/ Goda/ Bella : 200-300 gms.
Cardamom/ Ellaichi/ Yellu Powder : ¼ tsp
Kala Namak/ Black Salt : a pinch
** For Serving : Freshly prepared Tandla Shevai (Rice Idiyappam/ Rice String Hoppers) as required depending on the number of servings. (The recipe link of Shevai/ Idiyappam is given at the bottom of this recipe). You can also serve it with povu (poha/ beaten rice/ avalakki), just check my next post picture for the same.
** For preparation of Coconut Milk : Soak about 3-4 cups of freshly grated coconut/ soyi in 4-5 cups of hot water, cover and keep aside for 20 minutes. Use only the top white upper part of one whole coconut/ vaileechi soyi avoiding portion near the shell, you can grate that part and use it in preparation of curry. Add gratings in mixer grinder and grind to a smooth paste, the paste should be ground to a very fine paste.
** Remove and strain the coconut paste through a thin muslin/ cotton cloth. The coconut milk obtained is "Thick Coconut Milk No.1". Now put back strained residue into the mixer grinder along with 1-2 cups of water and grind well. Again, strain the same through muslin cloth to obtain the coconut milk. This coconut milk obtained is "Thin Coconut Milk No.2". Keep both the prepared milk ready aside separately.
** Note : For straining of coconut milk always use fine muslin/cotton cloth and do not use the stainless steel sieve as much as possible. The result obtained while strained using cloth is not achieved when done using normal steel sieves.

** Wash Cashew Apple Fruits (Kaju) well, wipe dry and remove the hanging seed/ nut if attached to it and discard the same if you have purchased the whole fruit with nut attached. Slice off both top and bottom stem portion of the fruit, cut the edible fruit portion to 1 inch sized pieces and keep it aside ready
** In a mixer grinder add the cashew apple fruit pieces along with ½ cup of water or thin coconut milk no. 2 and grind to a fine paste. Remove and strain through a fine sieve and add it to thick coconut milk extract no. 1 and mix well.
** Addition of Jaggery/ Goda/ Bella : You can either grate or add powdered jaggery for this recipe as I have or you can also add the jaggery in grinder along with some coconut milk and grind to a paste. In Mumbai we get good quality clean jaggery without any dirt particles that is easy to be added to dishes. However, in some places, it is not so in which case, grate/cut the jaggery to pieces, add in vessel along with a cup of water and let heat, when it melts, remove, strain through a sieve and its ready to be used.
** Add powdered/ grated jaggery along with thin coconut milk no. 2 to the thick coconut milk no. 1+ cashew apple fruit in the vessel and mix well until jaggery is mixed well and there are no lumps whatsoever. Check consistency and add more water or jaggery (for sweetness) if desired, I have given approximate measurement here, so add accordingly. Addition of a pinch of kala namak is Optional, I have begun to add just a small pinch to sweet dishes as it enhances the taste. Lastly add cardamom powder, mix well, cover with a tight lid and refrigerate it for 2 hours to let chill.
** Note : You can use store bought coconut milk if you find the method of preparing the same tedious or for any reason it is more convenient to you. I do so many times when I am short of time as we do get good ones in stores. However, check out on the expiry date to ensure that the product is fresh. In addition, taste a drop of the same before you add on the ingredients to be sure that it has not turned out sour.
** “Kaju- Narla Godu Rosu/ Harshala (Sweet Fresh Cashew Apple Fruit- Coconut Milk)” is done and ready to be served as per your choice. You can either crumble and add the freshly prepared rice shevai/ idiyappam to this mixture, cover and let it chill in fridge to be served or you can simply serve the chilled kaju narla godu rosu topped on freshly prepared shevai as it is, depends on your preference. This dish tastes best served chilled, so always serve them that way in cups/ bowls/ deep plates.
** In most of the GSB Konkani Saraswat homes they are served freshly prepared as it is at room temperature with freshly prepared rice shevai/ idiyappam for breakfast or lunch as per individual choice. In my home we prefer to serve the flavoured coconut milk chilled in bowls topped with shevai/ idiyappam or poha/ pova/ beaten rice after savoring some of the freshly prepared shevai/ idiyappam with spicy potato-onion curry (batato piyava songa) which is one of our favourite combo in my family.
** Most of GSB Konkani Saraswat’s who love to relish it with narla godu rosu (sweetened jaggery coconut milk) will love this twist as it is quite flavorful. However, I must mention here that unlike normal sweetened coconut milk the shelf life of this particular recipe is almost nil. You will have to chill it for about 2-3 hours and serve it immediately and not store it after that even in fridge as it tends to turn sour/ ferment. I am sure you all know that cashew fruit tends to ferment a lot, so be careful and do not prepare in excess and consume the same within maximum 4 hours.
