Pan Grilled Paneer/ Fries.

** Paneer fry is a spiced crisp fried snack often served as starter or along with other dishes. A simple snack that can be prepared in minimum time if you have paneer in hand. A simple marinade is used usually with addition of curds and spices, though the same can be prepared simply with addition of spices and tava fried.

** Paneer is a milk based product loaded with proteins and must be included into your diet for a healthy life style. You can serve it as a snack to children when they return home from school or playtime. These fries can be tava fried or grilled either way you prefer and can be served during meals be it with rice items or roti.

** Frankie's and wraps with paneer fries along with veggie fillings are more famous among children. Sandwiches are again the easiest to prepare, so also are burgers. Well the list of choices is plenty with endless options, which you can try in your own home with easily available ingredients from your own kitchen.

** To prepare these fries you can use any tava or grilled tava available in your home. The key to tasty paneer fries is the marinade and there are plenty of choices with spices. Here I have not used curd but replaced vinegar along with other spices, dusted it with spiced rava and pan grilled it with just a little bit of oil until crisp and done.

** Relish it dunked in coriander- pudina (mint) chutney along with tomato ketchup (children’s favorite) to enhance the taste of the fries. You can marinate the paneer slices and keep them refrigerated for 24 hrs if need be and fry them just before serving too. Either way this is one snack that is loved by one and all, so do try it.

** Here is my simple recipe for “Pan Grilled Paneer/ Fries” ... my style ...


** You can use homemade paneer or store bought one’s too, just see to it that you get even sized slices for the preparation of fries. For the method of preparing “Paneer” at home, you can check out on my link shared at the bottom of this recipe.

** I have used 8 pieces of 2” x 1.5” sized paneer pieces for this recipe. Do use according to number of pieces required in your home.

** For spice paste : In a small bowl add 2 tsp of Kashmiri chilly powder (mirsange pitti/ mirchi tikkat), ¼ tsp haldi (turmeric) powder, 1 tsp malwani masala powder (Optional), ½ tsp ginger- garlic (adrak- losun) paste, 1 tsp coriander (dhania/ kothimbir) powder, ½ tsp cumin (jeera) powder, salt (namak/ meeta) to taste, 2 tsp Vingegar, 1 tsp oil and mix well add a few teaspoons of water to get a thick applicable paste.

** Apply the prepared spice paste on the paneer pieces on all sides. Place it evenly on a plate/ tray or box and keep it refrigerated for 30-45 minutes. You can also store this for a few hours till required to fry the pieces too.

** Mixture for Dusting : In a bowl add 4 tblsp of fine rava (chiroti rava), 1 tblsp of rice flour (tandla pitti), 1 tblsp of Kashmiri chilly powder (mirsange pitti/ mirchi tikkat), pinch of haldi (turmeric) powder, 1 tsp salt (namak/ meeta) to taste and mix well. In my home I prepare in bulk and keep a stock of this mixture ready for all tava frying dish be it veg or no. veg. as it falls very handy whenever need arises.


** Lightly brush grilled pan with any edible oil and let it heat. Dust/ roll each paneer piece in prepared mixture and place them on hot tava. Brush a little bit oil on top surface of the paneer pieces too and fry on medium heat. When the bottom size has been crisply fried flip it over gently with the help of tongs and fry until crisp and done. Remove and place it on an absorbent paper for excess oil to be absorbed. Continue procedure for remaining paneer pieces following same method until all pieces are fried.

** “Pan Grilled Paneer/ Fries” is done and ready to be served. Tastes best served hot as a starter or snack with Coriander- Mint Chutney (or any other chutney of your choice) and Tomato Ketchup (kid’s favorite) along with some coolant (I served Mango Milk Shake). Easy to prepare snack if you have guests coming over at mid morning or evening or as a starter during meals. In my home we love to have dishes like cutlets, french fries, tikki, chettambado, fries as a starter for dinner when we have guests.

** Children are fussy eaters when it comes to veggies and milk, give them snacks, fries, milk shakes, ice creams, chocolates, burgers, pizza and they are game to relish any time of the day. Paneer is high in protein and if your child is fussy with milk, then include paneer dishes which is fantastic for growing children. It is also good for all including elders/older ones as the calcium needs are met. You can adjust spices included according to your family preferences, as it is a matter of individual preference.

** Note : It is best to use FRESH HOMEMADE PANEER both for taste and quality. However, you can use any from reliable sources too. Actually, CURDS/ DAHI are used for marinating, however I have used white vinegar as a substitute the same and it tastes wonderful, you may use any. Again, you can use any spice powder mixes you prefer too adjusting accordingly. Though these fries taste best fried crisp you may fry it slightly lesser if you prefer soft paneer pieces. You can serve this with any assorted veggie salad along with the coriander- mint chutney (or any of your choice) for best taste.
