Be it the northern parts or southern parts of India each community has their own method of preparing a simple veggie to be served during meals ... this is a simple in spices traditional upkari prepared in GSB Konkani Saraswats homes to be served with dalitoy- rice and it tastes awesome .... Yummilicious ....
** We often come across salads, pickles, bajia, curries, gojju served as side dish during meals and always forget to mention the importance of a simple upkari/ bhaji served along with them. The simple upkari is the most healthiest part of the meal and each one of us should make it a point to have it served always every meal. This not only fills up the tummy but also curtails the desire to relish heavier meal/ dishes served along with it.
** There is nothing exorbitant about this upkari, just a simple upkari that is good for digestion and easy on stomach. I am sure it is prepared in almost every home with minute differences. Use fresh cauliflower, during winter they are available in plenty and its that time when the famous Pav Bhaji is prepared the most. I am sharing my method of preparing this upkari which you may try out and enjoy with your family and friends.
** Here is my simple recipe for "Cauliflower- Batato- Piyava Upkari/ Cauliflower- Potato- Onion Bhaji" which I learnt from my amma ...
** Cut cauliflower into medium sized florets. You should have about 3-4 glasses of the same. You can take about 300 gms of cauliflower or as needed. Check for worms etc. clean well and wash in plenty of water and keep this ready aside.
** Peel the skin of 2-3 medium sized potatoes (batato/ aloo) and cut them into medium sized strips close to the size of cauliflower florets. This ensures even cooking of the two in upkari. Wash in plenty of water and keep aside.
** Note : You can cut down the amount of potatoes (batato/ aloo) if desired, we love potatoes in my house so I add them in equal measures.
** Peel off the skin of 2-3 medium sized onions (piyavu/ kanda), slice them thinly lengthwise, separate them slightly and keep them aside ready.
** Heat 1-2 tsp of oil (tel/ tela) in a thick bottomed kadai, when hot add 1 tsp of mustard seeds (rai/ sasam), when they begin to splutter, lower the heat and add 2-3 red chilly (sukki mirsanga) broken into medium sized pieces, 1 tsp hing (asafoetida) powder, ½ tsp of haldi (turmeric) powder and 8-10 curry leaves (kadipatt/ karbevu) and stir for a few seconds, taking care not to burn it.
** Add in the sliced onions and fry on medium to high heat for 2-3 minutes till they turn slighty translucent. Add in the potatoes and cauliflower and mix well. Sprinkle some water, cover with a tight lid and cook on medium heat for 3-4 minutes.
** Open the lid, sprinkle some more water if necessary ie. add salt (namak/ meeta) to taste, mix well, lower the heat to minimum and let cook covered till done. Remember to stir the bhaji a few times in between and sprinkle water if necessary for even cooking of the veggies. The bhaji is now cooked, done and ready.
** "Cauliflower- Batato- Piyava Upkari/ Cauliflower- Potato- Onion Bhaji" is done and ready to be served. Upkari/ Bhaji is always served as a side dish during meals and is a good accompaniment to all types of curries. Tastes awesome served with dalitoy (spiced tuvar dal) and sheetHa (rice) with a few other dishes with thali.
