Simple and easy bhaji that goes well with chapati / roti / parthas / poori. Children will simply love this dish. So rest assured you can prepare this bhaji and serve them with poori or any other accompaniment.
Peel and chop 3-4 large sized onions into medium sized cubes. Shell and collect green peas. You should have about 2 cups of them. Peel and cut 2 medium sized carrots to cubes. Peel and cut potatoes also to medium sized cubes. Wash and drain peas, carrots and potatoes and keep them ready aside.
Heat 3 tblsp of oil in a thick bottomed kadai. Add in 1 tsp of urad dal and fry till light brown then add in 1 tsp of mustard seeds and when they splutter, add in 1 tsp jeera, ½ tsp turmeric powder, 1 tblsp of hing powder, 8-10 curry leaves, 5-6 green chillies slit lengthwise and fry for a few minutes.
Add in the chopped onion and further fry till the onions are translucent. Add in potatoes, carrots, peas and one cup of water. Bring to a boil, lower the heat and cook till almost done. Now add in salt to taste, mix well and simmer for another 5-10 minutes till all the vegetables are cooked and the dish is dry. Serve hot with roti / poori.
