Urad + Rava Idly with Plain spiced Hinga Uddak (Water) ..........
In a large bowl add 3-4 cups of water. To this add about 3-4 tsp of the prepared hing water (check below), salt to taste and 5-6 crushed green chillies.
Leave the mixture aside to rest for an hour or so. The mixture gets settled and spiciness of of the chillies gets absorbed into the hing water in an hour or so.
Strain the mixture to remove the chilly pieces, add 1 tblsp of coconut oil (You can add any other oil of your choice). Mix well, check for the spiciness and add more water if necessary. Serve with Idly / Khotto.
Note: You can add in one cup of thin coconut milk extracted by grinding fresh grated coconut with water to the above Hinga Uddak to get thicker water consistency. Tastes good too.
Plain spiced Hinga Uddak / Hing Water is ready to be served. Serve this with Idly / Khotto.
*** To prepare the thick hing water, add some boiled and cooled water to the hing piece (the gummy one) and leave aside for a few hours, the gummy type of hing always melts in water and you get a thick white hing water which can be added to dals, baji etc. The flavour of this particular hing is very strong, so use it sparingly. Check the consistency and pungentness before adding in.
