Green Masala Pulav With Chicken Sheek Kababs.


Green Masala Pulav With Vegetables And Chicken Sheek Kababs (Kabab Store bought) ......


Green Masala Pulav or sometimes called as Hyderabadi pulav is rice cooked with vegetables or meat in ground green spicy masala. This is my version of Green Masala Pulav adding Chicken Sheekh Kababs. The same can be prepared with prawns too which i have already posted before. You can prepare the same with paneer or just vegetables too.





















Soak 2 cups of Jeera Rice / Basmati rice in plenty of water for 30 minutes. Wash well, strain and keep in a colander for all excess water to drain off.











Peel the skin of 2 large sized carrots and cut them into strips or any other shape of your choice. Cut 200 gms of cauliflower into florets. Cut 100 gms green beans into strips of the same size as that of carrots. Wash all the three vegetables, drain and keep them ready aside.











Cut 250 gms of Chicken Sheek Kababs into about 2 inch pieces and keep it ready aside. (I have used readily available ones from the store here, you can either prepare them or leave out the same.


Grind to a fine paste : 3 cups of coriander leaves, ½ cup of pudina leaves, 1 inch piece of finely chopped ginger, 12-15 skinned and chopped garlic, 4-5 finely chopped green chillies. 1 tsp of haldi powder, 1 tsp of jeera powder, 1 tsp of fennel powder. The paste should be very smooth.


Boil 4 cups of water in a separate vessel. When it comes to boil, lower heat to medium and add in the carrots, beans and cauliflower and cook till 50% done. 


Meanwhile heat 1 cup of ghee / oil ( I use 1:1 proportion of ghee and oil) in a thick bottomed kadai, when hot lower the heat and add in the Chicken Sheek Kababs and fry till light brown, remove and keep aside. 


Add in to the same kadai, ½ tsp pepper corns, 8-10 cloves, 3-4 slit green cardamoms, 4-5 slit black cardamoms, pinch of jaivitri (Mace), 1-2 Star anise, 4-5 pieces of 2 inch each dalchini (Tike saal), 2-3 bay leaves, 8-10 curry leaves and fry well for a few minutes. 


Add 2 medium sized finely sliced onions and fry till translucent. Add the ground coriander pudina masala and fry for 5-8 minutes. Add in the rice and fry for a minute or two.



For further cooking I have used Electric Rice Cooker : Pour the mixture of fried ingredeints into the rice cooker add in the chicken sheekh kababs too. Then add in the cooked vegetables along with the water into the rice cooker. Add salt to taste and mix well.











Put the cooker on cooking mode and cook till almost done, about 80%. Mix once in between to ensure eveness in cooking. Change the cooker to warm mode and let cook further for a few minutes (about 5 minutes). 


The green masala sheek kabab pulav is done. Remove and serve hot with any side dish or Raita. 


** Note : If not using Electric Rice cooker, just proceed with the same procedure in the kadai, just add in the kababs and the vegetable with hot water to the masala fried rice in the kadai and bring to a boil, add salt to taste and lower the heat. Cover with tight lid and cook till done.
