Muskmelon topped with Mango Ice Cream .....
Remove the outer skin and clean off the inner seeds of one small sized muskmelon. With the help of a rounded small spoon carve out some muskmelon balls for topping on ice cream. Chop the remaining muskmelon finely. You should have about 5-6 six cup of them.
Add 1 cup of sugar and crushed 1-2 crushed pudina / mint leaves (Optional) to the chopped muskmelon, mix well and keep it in the fridge to cool.
For Serving : Take a large ice cream serving bowl add the muskmelon pieces along with the melted sugar syrup. Top it with 2 scoops of Mango Ice Cream. Top with a glazed cherry and arrange the muskmelon balls on the side. Sprinkle some sugar coated peppermint sprinklers on top and serve immediately. You can top the muskmelon with any other flavored Ice Cream too.
