** Simple traditional dishes are always a favorite in my home and though I try out various dishes it is a must to have totally amchi dishes at least 4 times a week. This is a simple veggie combo that is loved the most in most homes. When its season of raw jackfruit ie somewhere in the month of December to May, everybody loves to prepare dishes using them either as addition to pulses, chokko, pickle and many more varieties. However, Chakko is loved by almost all Konkani Saraswats and is frequently prepared when in season. You can top it with a teaspoon of raw coconut oil when serving and its tastes fantastic as a side dish when served with dal- chawal or with saar and rice too.
** Upkari is Bhaji, a stir fry of veggie also served as side dish along with other dishes be it for lunch or dinner. In most homes again a simple bhaji with any veggie is a must as it is healthy and low in calories. Upkari usually is kept simple with either mustard- chilly seasoning or garlic and there is absolutely no inclusion of any other masala be it in dry form or ground form. A little bit of freshly grated coconut is added on as garnishing, though recently people have stopped it as many try avoiding coconut into meals believing it to be full of cholesterol. In my home I do add just a little bit as not only do we love it, but I always believe that our ancestors were bang on right in all ways.
