Kathal ki Hari Sabzi / Raw Jackfruit Green curry
Cut 250 gms of raw jackfruit into bite sized large chunks. Wash in running water. Apply salt and a tsp of oil, mix well and pressure cook to one whistle adding ½ cup of water.
Grind to a fine paste 1 cup of coriander leaves with 3-4 green chillies, 1 inch piece of ginger, 5-6 cloves of garlic, marble sized tamarind, 1-2 medium sized tomatoes and 5-6 tblsp of curds. Heat 2-3 tsp of oil in a kadai, add in a handful of cashew nut and ¼ cup of finely chopped garlic pieces and fry till light brown in colour now add in 1-2 bay leaf, 8-10 curry leaves and 2 large sized onion finely chopped. Fry on medium heat till the onions turn brown.
Add to the above one by one …. Few methi seeds, ½ tsp jeera, ½ tsp rai (sasam), ½ tsp black til, 1-2 black cardamom slit lengthwise (Optional) and fry for a minute, now add in ½ tsp of haldi powder, 2 tsp of coriander powder, 1 tsp of jeera powder, 1 tsp of fennel powder, 1-2 tsp of red chilli powder, ½ tsp methi powder, 1 tblsp of garam masala powder and fry well for a minute or two, sprinkle water if necessary if you find the masala dry and getting burnt.
Add the ground masala to the above masala, add water if necessary to make a semi thick gravy. Add salt to taste and the pressure cooked Raw Jackfruit pieces. Mix well and bring to a boil on medium heat stirring often to prevent the masala getting burnt. Lower heat, Cover and simmer for 5-10 minutes, till the gravy gets soaked into the jackfruits and absorb the flavors of all the spices. Add more water if you find the gravy too dry. Remove and set aside for 10-15 minutes before serving with Roti /pulka / naan.
