"French Beans~Potato Kolumbo/ Sambar" .... A delicious famous south Indian dish that tastes great when served with Rice/Idly/Dosa ... Yumz ...
** Kolumbo or sambar needs no introduction anywhere in the world as it has now become famous worldwide. Almost all Indian settled anywhere in the world prepare this delicious dish to be relished either with rice or Idly / dosa. I have posted kolumbo many times in different varieties with different combination of pulses/ beans or vegetables. This time I prepared the same with French Beans and Potato a very common vegetable available all round the world and tastes wonderful. A simple yet delicious dish that can be served with rice/ Idly or dosa. I will not run into much details as I have already written enough before, so let's move straight to the recipe.
** Here is the simple method of preparation of "French Beans~Potato Kolumbo/ Sambar" … My Style …
** Wash and pressure cook ½ cup of Tuvar dal. Remove and mash well and keep it ready.
** For Masala to be Ground : Roast the following in a kadai with 1 tblsp of oil : 2 tsp of Coriander seeds, 1 tsp of Urad dal,1tsp Chana dal, 1 tsp Jeera, ¼ tsp of Methi, ¼ tsp pepper corns, 7-8 Red chillies, 5-6 curry leaves, when they turn a bit reddish in colour add 2 tblsp of fresh grated coconut and fry till brown in colour and you get a nice aroma. Take care not to burn the masala. Remove and grind this to a paste with a marble sized tamrind and very little water.
** Cut 200 gms of French Beans into 2-3 inches in length pieces. Peel the outer skin of 3 medium sized potatoes and cut them into thick 2-3 inches in length strips. Wash and rinse well. Put this both together in pressure cooker with half a cup of water and pressure cook to one whistle. You can cook on gas too, but it will take more time. After one whistle release the pressure of the cooker and remove the cooked vegetables immediately or else they will get mushy / over cooked.
** Add the cooked beans and potatoes to the mashed dal. Add 2-3 large tomatoes cut into 6-8 pieces each. Add the ground masala mix well. Add salt to taste. Bring to a boil, lower heat and simmer for 5-10 minutes. Add ½ cup of coriander leaves and remove from heat.
** For Tempering : Heat 1 tblsp oil in a small pan, when hot add 1 tsp of rai (sasam) and when they splutter add in 1 tblsp of hing powder and 8-10 curry leaves, fry for a few seconds and pour over the Kolumbo/Kolmbo/Sambar.
** "French Beans~Potato Kolumbo/ Sambar" is done and ready to be served with rice or any other dish of your choice. This is a famous south Indian/GSB Konkani Saraswat dish that is popularly prepared in almost every home. Do try it out and enjoy with your family and friends.
** Note : Cover and keep the kolumbo aside for 10-15 minutes before serving with Rice or any other dish for the flavours to get seeped into the curry.
** You can make kolmbo with any other Vegetables you like for eg.. brinjal, drumstricks, radish, onion etc.
** The same Kolmbo is also popularly known as Sambar and can be served with Idly to which you can then add Onion + Tomato + Yellow Pumpkin + Carrots.
