Egg Dry Masala.


“Egg Dry Masala”... here is a scrumptious egg dish that can be served either for breakfast or meal … this has always been my simple quick fix meal when in hurry as it is not only tasty, but healthy, tummy filling and easy to prepare too … tastes best served with Mumbai Pav/ Bread … Yummilicious … 

** Eggs have always been a favorite as they are not only dependable when you need to fix a quick meal but are also healthy filled with nutrients. I have already written reams on my liking for eggs as they are versatile and blend well giving perfect results. Today was one day when I had to attend an unexpected call, which meant I could not prepare lunch. Hubby as usual insisted on home delivery of chicken curry- naan one, our favorite, from nearby famous eatery. Somehow, I was not in mood to relish a heavy meal in this heat, so decided on this simple dish of mine, which had been eons since I prepared.

** Those of who are familiar with my blog, might remember me mentioning my dear to life 7 diaries in which I have jotted my recipes prepared over decades after marriage and settling in Thane (Mumbai). Those days I was busy with my business commitments than now, so opted for easy to prepare dishes and this one was fitted perfectly when served with Mumbai pav, which is always available fresh almost in every corner of the city. The best part of this city is, one need not go hungry, as there is plenty of both pocket friendly or otherwise food available all round the clock, that’s what keeps ticking this city.

** Coming to recipe, it is easy to prepare if you have eggs ready at home and in my home they are always stocked, so no worries on that front. The other ingredients are also easily available in almost every kitchen and malwani masala used here can easily be replaced with any other curry masala powder like chicken masala, pav bhaji masala, chole masala etc. In all this one is definitely a tummy filling meal when served with pav/ bread, though if desired you can serve it with roti/ parathas or dosas too. Just go ahead, try it out and enjoy it with any accompaniment that your family prefers, tastes awesome.


** Here is my simple recipe for “Egg Dry Masala”... my style ….

** Hard boil 4-6 Eggs/ Motto/ Andey or more depending upon your requirement (number of people), I prepared with 4 eggs sufficient for 2 people.

** Shell the eggs, cut them into halves or quarters and keep it aside ready. You may cut them into desired sized/ smaller pieces too.

** Peel the skin of 3 large sized onions (piyavu/ kanda) and slice them lengthwise as thinly as possible and keep it aside ready. Wash, wipe dry and cut 1 large sized tomato also lengthwise and keep it aside ready separately.

** In a thick bottomed kadai add about 2-3 tblsp of oil (tel/ tela), when hot add the onions and fry on medium heat until they turn translucent/ pinkish. Do not turn them brown in color or over fry them as then they will turn bitter.

** Now add 1 tblsp of garlic (losun/ lehsun) paste and fry for a minute, then add 1 tsp ginger (adrak/ alle’) paste and fry for another minute or so.

** Note : I used readily available ginger paste and garlic paste from stores, you may use any or you can grind the same too in same proportion.

** Now add 1 tblsp malwani masala powder, 2 tsp kashmiri chilly powder (mirsange pitti/ mirchi tikkat), 1 tsp coriander (dhania/ kothimbir) powder, ¼ tsp cumin (jeera) powder, pinch of haldi (turmeric) powder, ¼ tsp goda masala powder or garam masala powder and fry for another minute or so, sprinkling water if necessary.

** Note : Addition of malwani masala powder is my choice as I am quite partial to this aromatic masala powder. However, in case you do not prefer to or is not available you can replace with any curry masala powder of your choice.

** Add chopped tomatoes, salt (namak/ meeta) to taste, mix well and let cook on medium heat stirring often without adding water. Once the tomatoes soften, mix well, cover and cook on low heat until the tomatoes turn really soft and mushy.

** When tomatoes have turned soft, slightly mash with potato masher to make a well blended masala texture. Finally add prepared hard boiled egg pieces, mix well and let cook covered for at least 5-8 minutes stirring a few times in between.

** Lastly add a handful of finely chopped coriander (dhania/ kothambari pallo) leaves, mix well, cover and cook for 3-4 minutes, then add a 1-2 tblsp of homemade ghee/ toop, mix well, remove and let rest for 5 minutes for flavors to infuse.

** “Egg Dry Masala” is done and ready to be served. Tastes best served with Mumbai Pav/ Bread/ croissants/ roti/ parathas etc. either for breakfast or meals. If like us you too love egg dishes then try this simple dish if you have not done so already. Eggs are good for health being high on protein and other nutrients and if you are an non.veg. then you should include a few into your weekly diet especially for growing children.
