"Sama (Savai/Kutki) Ponsa Mulika / Little Millet Ripe Jackfruit Fritters" ... I had some ripe jackfruit leftover after preparing mulika a few days back ... so tried preparing mulika using millets that are supposed to be healthy ... don't go by the darker shade color, the mulika was too soft and spongy ... Yummilicious .....
** Mulika are sweet deep fried balls prepared by and large using ripe jackfruit when in season, though it is prepared using bananas too. A common dish that is very aromatic prepared in Konkani Saraswat homes throughout the season when ripe jackfruits are available in plenty. Children love these sweet dumplings that are soft to munch on very much. These are prepared grinding the ripe jackfruit with some coconut and jaggery and then either rava / Bombay rulav or rice ground fine is added on make a dropping consistency and the same is then deep fried in hot oil. I have always prepared these using Bombay rava as it is the easiest recipe, which I have posted before, but a few days back after decades I prepared it with rice too. Again the same has been posted a few days back. I will be sharing a common link at the bottom of this recipe to mulika recipes and you can check out on the same too.
** I have always loved experimenting in my kitchen and most of the time I have never had to regret my trials except for making minute changes. I had some ripe jackfruit pieces left over after preparing the mulika with rice and had to be used immediately. You see, ripe jackfruit does not remain good even in if it is stored in fridge for more than a few days and starts smelling bad. Hubby wanted me to prepare the mulika again, as I had shared most of what I had prepared with my friends and it got over within a day. I decided to prepare the remaining ones with rava the next day as it is easier and will be done in jiffy. But at night I just got the Idea, and thought why not prepare it with millet, as they are considered to be healthier. Well, nothing to lose as I was confident that it would be edible if not too good. So the next morning, I washed and soaked 2 cups of little millet and rest is history.
** Here is my simple traditional recipe for "Sama (Savai/Kutki) Ponsa Mulika / Little Millet Ripe Jackfruit Fritters" ... My Style …
** Ingredients :
Little Millet / Sama / Samai / Kutki : 2 cups
Ponosu / Ripe Jackfruit Pieces : 2 – 2.5 cups chopped pieces
Coconut / Soyi : 1 cup (fresh finely grated)
Jaggery / Gud / Goda : about 50-75 gms grated.
Cardamom / Ellaichi / Yellu Powder : ½ tsp
Bombay Rava : ½ cup or as required.
** Wash and soak the little in 4 cups of water for about 2 hours. Wash well, drain off all excess water and put it in a mixer grinder along with jackfruit pieces, grated jaggery and coconut. Grind to a smooth paste without adding any water mixing the mixture well in between to get a well ground mixture.
** Note : Ripe jackfruit and jaggery have enough water content in them to enable the mixture to be ground to a smooth texture.
** Remove the ground paste into a bowl and add in the cardamom powder and rava little by little mixing well. Be careful with addition of rava as on resting the rava soaks up moisture and the mixture will turn a little bit dries. You can always add on later if needed.
** Keep the mixture aside for 20 minutes for the rava to absorb moisture and swell a bit. This is absolutely necessary or else the mulika will not turn out soft if done directly on mixing. After the resting time if you find the mixture too thick, you can sprinkle some water or if thinner then add in some rava. The mixture should be of pouring consistency similar to bonda textures.
** Note: The addition of rava depends upon the ground batter. Do not add all in one go, but add some mix and repeat till you feel necessary.
** Heat plenty of oil for deep frying in a thick bottomed kadai/pan to smoking point. When done, lower the heat and wait for a few minutes to bring down the heat. We need the oil to be medium hot. Now drop about spoonful of the mixture into the hot oil gently with your hands taking care to see that the oil does not splatter. Add in a few at a time and do not overcrowd the pan.
** Cook the mulika/fritters on medium to low heat constant heat till slightly browned and then gently with a ringed spatula turn them over and cook all over till well and evenly browned. Remove and place them on an absorbent paper for the excess oil to get drained off. Repeat the procedure in batches till all the mixture is done.
** Note : While the mulika is dropped into the hot oil let it cook a bit till lightly browned before you turn it over with spatula and do not attempted to do so prior lest the fritters break up in the oil. It should be left undisturbed to cook before attempting to turn them over all round.
** "Sama (Savai/Kutki) Ponsa Mulika / Little Millet Ripe Jackfruit Fritters” is done and ready to be served. These can be served hot or cold, they taste good either way. They are actually served at room temperature. They remain good for some days around a week, so once they have cooled down put them in a airtight container and store away and enjoy as and when required.
** Do try out these delicious mulika/fritters and enjoy as a snack sharing with your family and friends with some hot/cold beverages. They are great to carry when travelling, specially when you are travelling by train as they are quite filling and not messy and definitely a great time pass. I enjoy them as my dinner followed steaming hot turmeric milk, my favorite Combo.
