Drumstick~Brinjal~Raw Mango~Tomato Dry Curry.


“Drumstick~Brinjal~Raw Mango~Tomato Dry Curry / Mashinga Sanga~Vaingana ~Ambuli~ Tomato ghalnu Upkari” … A healthy side dish that goes very well with chapati / roti … You can relish this with dosa too ... Yumz …... 

This is a simple bhaji / upkari that I prepared adding in sambar powder to veggies. I had lots of drumsticks given to me by my friend who had brought it from her home town. After adding it to many dishes there are still a few more that are almost drying out. So just went about making this one with my own mix and match of ingredients. There is no gravy as such to this bhaji, but it makes a good side dish and can be served with dal-chawal, though it tastes best with roti. I will not go into the details of veggies as these are common vegetables available everywhere. You can leave out the raw mango and add only tomatoes too. But I added both as I always have raw mangoes in my fridge during season. I love the tart taste of the raw mango and try including it to many dishes. Simple one but quite taste for a change. Do try this out as it taste awesome with brinjal / aubgerine / vangi. 

** Ingredients : 
Brinjal / Vaingana / Vangi / Aubergine : 1 medium sized about 300 gms. 
Tomatoes : 1 large sized 
Drumstick / Mashinga Sanga / Shenga : 2-3 about 12-14 inches in length. 
Onion / Kanda / Piyavu : 2 large sized. 
Raw Mango : 1 medium sized. 
Salt to taste 

** For Tempering : 
Oil : 2-3 tblsp 
Urad Dal / Split Black gram : 1 tsp 
Jeera / Cumin Seeds : ½ tsp 
Methi / Fenugreek Seeds : ¼ tsp or a pinch 
Mustard Seeds / Rai / Sasam : 1 tsp 
Curry Leaves / Kadipatta / Karbev : 8-10 
Haldi / Turmeric Powder : ½ tsp 
Sambar Powder : 2-3 tsp 
Hing / Asafoetida Powder : 1 tsp 


** Wash and wipe brinjal and slice off the edges. Cut them them strips of 3 inches keeping about ½ inch width. Keep them immersed in water aside or else they tend to discolor. 

** Wash and cut the tomato into medium sized cubes and keep it aside. 

** Note : If not adding in raw mango, add in 2 large sized tomatoes. 

** Slice off the edges of drumsticks and cut them into 3 inch pieces stringing them as you cut them. Keep them immersed in water aside. 

** Wash and wipe the raw mango. Slice off the stem side edge and cut the edible flesh part into strips of 3 inch length by ½ inch width. Discard the inner seed. You can retain the skin. Keep this also aside. 

** Peel off the skin of onions and cut them into medium sized cubes. Keep it aside ready too. 

** In a thick bottomed kadai add in the oil, when hot, lower the heat and add urad dal and fry till the color changes slightly add then add in jeera, methi seeds, mustard seeds and finally the curry leaves. Fry for a few seconds on low heat. 

** Now add in the cubed onions and fry till translucent, then add in haldi powder, hing powder, sambar powder and mix well. Do not allow the masala to get burnt. You can sprinkle some water if you find the powder getting stuck to the bottom. 

** Note : If you do not have Sambar Powder or do not want to use it, you can substitute it with 1 tsp of dhania / Coriander powder + 1 tsp of Cumin / Jeera Powder + 2 tsp of kashmiri red Chilly Powder. 

** Add in chopped tomatoes, raw mango pieces and drumstick pieces. Mix well and add in one cup of water and bring to a boil. Once it comes to a full boil, lower the heat to minimum and cook covered till the drumsticks are half done. 

** Add in the brinjal pieces, salt to taste and mix well. Add in water if necessary if you find that the water has lessened. Cover and cook till done. Mix well in between for even cooking of the veggies. 

** The veggies when get cooked properly will thicken a bit on its own. Do not make it too dry. A little bit of thick water from the gravy makes it much more tastier. So add water only if necessary. Allow to simmer for 3-4 minutes and remove from fire.

This dish tastes best when served with chapati / roti / paratha. You can also serve it with dosa like panpolo / neer dosa or urad-rice dosa too. Tastes really good.
