Sunday Brunch ... “Green ~ Egg Omelette” Served with Tomato Ketchup (Store Bought) along with Bombay (Mumbai) Pav and Kadak Adraki Chai (Strong Ginger Tea) … A delicious healthy Special Omelette with added benefits of greens that will keep you tummy full for loooong time ... This can be savored during bf, lunch or dinner too ... I had this as Brunch for laaaaazzzy Sunday ... Totally Yumz …..
** Once again I came up with a special Omelette which I relished for breakfast with our very own soft and spongy famous Bombay (Mumbai) pav / bread and a strong / kadak chai (Tea). These are really very easy to prepare and being highly nutritious, it’s a great dish that should be given to growing children who are very active all the time. Children are always fussy and are reluctant to eat something given to them on routine cooked in the same manner. A little bit of change here and there will not only make the dish higher in nutrition but they will also eat the same with a murmur. A dish when it pleases the eye is usually enjoyed by all without complaints. Children love ketchup so do add in spoon of the same for added temptation. I have included different combinations of Omelettes before as my family loves eggs in any form.
** With growing health awareness, it has now come to light that too much of eggs is not so good. So I have been thinking for some time now, how to decrease the amount of eggs in a omelette as too much of eggs are actually not good once you enter into your fifties nor for the younger generation who eat plenty of cheese etc. Eggs have high content of cholesterol in them and it is difficult to digest. I wanted to cut down on the amount of addition of eggs, yet maintain the fluffiness and bulk in the omelette. So, I am trying to prepare them in different variations by addition of lesser eggs and some flour or making them higher in healthy nutrition by adding in veggies.
** So here is my very own version of “Green Egg Omelette” I prepared using finely ground greens and adding it to the batter. My hubby, a vivid egg lover was very happy with this pleasant looking omelette and this is going to stay in my kitchen till I discover more options, which I know I will. The best part of the omelette is you do not need any bread or pav to be served along with this one (so some more calories are cut off), just a little bit of ketchup is all that is enough. I have added in all the spices and made it sort of all in one omelette that can be carried in lunch box or tiffin. I am so excited with this one, that my brains have already started working on other options and methods or varieties in cooking these. I am sure your family will love this. Trust me it’s the best way to make children eat healthier without loading in calories and yet keeping their bellies full.
** Ingredients :
Fresh Eggs : 3-4 large one’s.
Onion : 2 medium sized Chopped finely.
Tomato : 2 medium sized chopped finely.
Coriander Leaves : handful finely chopped.
Garam Masala Powder : ¼ tsp
Haldi / Turmeric Powder : a pinch
Salt to taste
Ghee : For frying of Omelettes
** To Be ground to a fine paste :
Coconut : 2 tblsp freshly grated (Optional, but do include it gives nice texture)
Coriander leaves / Kottimbir / Kottambari Pallo : One cup finely chopped
Pudina / Mint Leaves : 6-8 only.
Green Chillies / Hirvi Mirchi / Tarni Mirsanga : 5 – 6 cut into pieces
Ginger / Adrak / Alle’ : 1 inch grated.
Garlic / Losun : 4 – 5 large cloves grated.
Curry leaves / Kadipatta / Karbev : 8-10 fresh one’s finely chopped
** Serve With :
Tomato Ketchup for serving (I used store bought)
Bombay (Mumbai) Pav / Brown Bread / White Bread
** Grind all the ingredients mentioned above to be ground to a very fine paste using little bit of water. Do not add more water. Only that much which is absolutely necessary for grinding is enough or else the batter will thin out and the omelette will not be fluffy.
** In a small bowl mix together the finely chopped onions, tomatoes and coriander leaves and keep this ready aside. This will be used to top the omelette once it is poured into the pan.
** Note : You can add this to the egg batter too, I normally add while I make a simple omelette. But as we have already added ground masala which has some weight in the batter, there are chances of the onion and tomatoes that also have some weight settling down and sticking to the pan below and removing the omelette then becomes tougher or it may break up.
** In a porcelain or glassware bowl, break and add in fresh eggs. Beat with an electric egg beater (you can use hand beater too) till the eggs get fluffier and it multiplies in quantity. Add in salt to taste, haldi powder, garam masala and beat it for another few seconds till it mixes well.
** Now add in the ground paste to the egg mixture and mix well. With a large rounded ladle. See to it that all ingredients are well blended and mixed. There should be no lumps whatsoever. Check the consistency of the mixture, it should not be too thick. It should be slightly thicker than that of plain egg omelette texture.
** Heat a non stick pan or any other regular pan you use to remove Omelettes. I have a different small sized pan which I use only for egg omelettes as I do not like to mix up the tavas / pans. Add in a few drop of ghee / clarified butter and spread it all round evenly on the pan.
** Pour in a cup full of the prepared egg mixture into the tava / pan and spread it by tilting or gently with the back of a rounded spatula. Add in a few drop of the melted ghee on the sides. Cover with a lid and cook on medium heat for 2-3 minutes.
** Now open the lid and evenly top the omelette with a lit bit of the onion – tomato – coriander mixture. Gently press them down slightly with the back of the ladle. Now cover and cook till the top of the omelette is cooked. If not sure, just check by touching the top surface with a finger. If the mixture does not stick to the finger, it’s done.
** Add a few drops of ghee on top of the omelette and gently flip it over and cook the top side too without covering the pan. Remove the omelette and put it in a serving plate. Precede the method with remaining egg mixture. You will get about 4 semi thick fluffy omelettes with about 8 inches in diameter.
** “Green Egg Omelette” is done and ready to be served. Serve it hot topped with tomato ketchup for added tasty flavor. This omelette does not need to be served with bread as we have added in spices and masala. But if you desire, you can do so, tastes equally good.
** I served it with tomato ketchup, Bombay Pav (Bread) and kadak adraki chai / strong ginger tea. A good tummy filling omelette that is very fluffy and tasty that can be relished for bf, lunch or dinner. Try this out and enjoy with your family and friends.
