Egg ~ Rava ~ Nachani Omelette.


“Egg ~ Rava ~ Nachani Omelette” …. A perfect omelette with the added goodness of Nachani / Ragi / Finger Millet that can be served for breakfast and get kids to eat them without a murmur … Totally Tummy Filling and Healthy Too ... Yumz ….. 

As I mentioned before Egg Omelette is a traditional English Breakfast that has caught up on Indian families after the British Left India. Easy and quick to prepare these are very filling and keep you going till lunch time without any hunger pangs. Children love these omelettes and other items prepared with egg too. Today’s children have such a tightly packed schedule that it becomes very difficult for the Mother’s to keep the nutrition intact in dishes. That is when one has to come up with innovative Ideas to include good food into their plates that is both delicious and healthy. It is very difficult to make a reluctant child eat a food that is not appealing to them. So try out different new dishes keeping in mind the nutrition and half the battle is won. Your children too will love the different variety of dishes given to them and will happily enjoy them. It will also build in a good habit of eating home cooked food in them. I prepared this omelette with nachani as finger millet are one of the best food that young and old should relish alike. I have kept this omelette simple, but onions, tomatoes or any other veggies can be included too, which I will be doing next with. 


To Prepare the batter for the Omelette : 

** In a porcelain or glass dish break and add in 3-4 fresh eggs. Add in a little bit of salt, pinch of haldi powder and beat with a egg beater (you can use electric beater to speed up the procedure) till it multiplies in quantity. Add in half a cup of Nachani Flour (Ragi/Finger Millet) and ¼ cup of rava and continue mixing the mixture till all the batter has come to a smooth consistency with any lumps in them. 

** Chop 6-8 green chillies into rounds of required width and a few curry leaves into fine pieces. Add these to the batter of beaten eggs along with half a teaspoon of pepper powder and mix well. 

** Heat a non stick pan or any other regular pan you use to remove omelettes / egg dosas. I have a different small sized pan which I use only for egg omelettes as I do not like to mix up the tavas. Add in a few drop of ghee and spread it all round the pan. 

** Pour in a cup full of the prepared egg mixture into the tava and spread it by tilting or gently with the back of a rounded spatula. Cover with a lid and cook on medium heat till the top of the omelette is cooked when you touch it with a finger and the mixture does not stick to the fingers. 

** Add a few drops of ghee on top of the omelette and gently flip it over and cook the top side too without covering the pan. Remove the omelette and continue with the remaining batter in the same way. You will get about 5 omelettes of 8 inch dia. The size of the omelette depends upon how many omelettes you manage to get. 


** “Egg ~ Rava ~ Nachani Omelette” is done and ready to be served. Always serve omelette hot and freshly prepared. Do not preserve the batter in the fridge too, they should always used immediately. I served the omelettes with Bombay Pav / soft bread which is freely available in Mumbai. You may choose any type of bread that is available in your vicinity.
