"Vegetable Soup" served with Tava- Butter Fried Bread Slices ... here is healthy delicious veggie soup for cold winter ... Yummilicious ....
** Hot Vegetable soups are a blessing during winter season. The chill in air tickle your senses and make you want something hot and spicy to sip on. Hot soups with lots of pepper is very good for health and is always a welcome sight to guests when they come in from outdoors. Here is a vegetable soup with lots pepper that is not only good for health but will also keep away the cold and create heat in the body.
** Here is my simple recipe for "Vegetable Soup" .... My style .....
** Cut one medium sized cauliflower into medium sized florets. You should have about 2 cups of florets. Peel off the outer skin and cut the carrots/ gajar into 2-3 inch length pieces of medium thickness. Again you should have these about 2 cups.
** Wash and put them in a microwave safe glass bowl with a cup of water and cook on high for 3-4 minutes. If cooking in vessel on fire see to it that you retain the crunchiness and do not overcook them. It should be 80% cooked only.
** Wash and cut 2 medium sized capsicums (simla mirchi/ donnemirsanga) into strips of medium thickness. Add them to the cooked cauliflower and carrot along with one cup of washed corn kernels and again microwave for 4-5 minutes.
** You can continue cooking on fire by adding them to the cooking vegetables when half cooked and continue till they are about 80% cooked only. Whichever method you use just cook all three veggies and keep them ready aside.
** Peel off the skin and slice lengthwise thinly one large sized onion (piyavu/ kanda). Heat one tablespoon of butter/ loni in a thick bottomed vessel/ pan, when it melts add onions and fry for a minute or two on high heat stirring quickly.
** Now add in the cooked vegetables along with the water. Add more water if required only. Add salt (namak/ meeta) to taste, mix well and bring to a boil on medium heat. Then lower the heat and let the soup simmer.
** Add 1 tablespoon of cornflour in a bowl with half a cup of water and mix to a smooth lump free paste. Add this to the simmering soup and immediately keep stirring well until you see the soup being thickened.
** Add a tablespoon of soya sauce and 2 tablespoon of coarsely crushed black pepper (kali miri) powder to the soup and mix all well together and bring to a boil on full heat stirring until it is done well, remove and keep it aside covered.
** "Vegetable Soup" is done and ready to be served. Though this soup being full of veggie is a complete filling meal in itself can be served as it is, it taste great served with some tava fried bread slices with butter like I did.
