Here is an awesome Veg. Thali that is simply loved by all in my family. The crispy bajia’s / bajo’s just get emptied so fast that I have to hide some before serving the first round for guests, so that I will still have some left for others. Dalitoy prepared out of Tuvar Dal, off course has a place of its own in every GSB / Konkani Saraswat’s Heart. Its something they always relish with love even if served everyday. Now about the Matti Gulla, this is actually a green brinjal available in place called Matti somewhere near Udupi in Mangalore, Karnataka State. These are seasonal and are available in Mangalore Stores in Mumbai and other Cities too. We GSB’s love this particular variety of brinjal which is round and a bit darker green in colour. All dishes that are prepared with this variety of gulla / brinjal can also be prepared with any variety of Gulla / brinjal ie available in your town. The taste may differe a bit, but on the whole there is no much difference. Mashinga sanaga are dumsticks, that are added to the curry with different combinations. Taka is nothing but buttermilk prepared by diluting fatless curds with water and churning it well. Taka / buttermilk is very good for digestion and is almost served in every GSB household after lunch. Taka can also be prepared with full fat milk, in which case while churning, you will get good white butter out of it, which can be either relished as it is with dosas or made into ghee. However the easiest method to prepare buttermilk daily is to just add water and fat less curds ie curd prepared from skimmed milk in the ratio of 1:1 and churn them to a smooth texture and your buttermilk is ready. You can add in a pinch of salt and hing powder to this which is very good for health and helpts in digestion of food. Buttermilk prepared in this way can be enjoyed guilt free in plenty as it is almost without any fat content in it.
