** The story of Moringa/ Drumstick Leaves/ Mashinga Pallo has suddenly seen the light of the day. This humble tree was always found in the backyard of almost every home along with other trees like coconut tree, jackfruit tree, mango tree etc. that were all God’s gift to mankind. In olden days a home with these trees and a few cow’s was believed to be one that was prosperous, healthy and off course wealthy.

** Though they are still to be seen in and around cities somehow the concreatisation has taken its toll and they are lost in phase of time. The sad part is even in villages they are slowly losing out to modern way of lifestyle. Well, I have prepared this recipe as a simple upkari/ bhaji/ stir- fry/ thoran adding plenty of onions and garlic along with green chillies for spice. Simple yet tasty, try it you’ll love it.

** Here is my simple recipe for “Mashinga Palle Upkari (Moringa/ Drumstick Leaves Stir- fry)” … my style …

** Ingredients :
Mashinga Pallo/ Moringa/ Drumstick Leaves : 4-5 cups
Garlic/ Losun/ Lehsun : 3-4
Onion/ Piyavu/ Kanda : 2 medium sized
Green Chilly/ Tarni Mirsanga/ Hari Mirchi : 4-5
Turmeric/ Haldi Powder : ¼ tsp
Jaggery/ Goda/ Gud/ Bella : one small piece/ 1 tblsp
Coconut/ Soyi/ Nariyal : 1-2 tblsp (Optional)
Coconut oil/ Nariyal Tel/ Narlel Tela : 2 tblsp
Salt/ Namak/ Meeta : to taste


** Pick, wash, drain the Moringa leaves well for 20-30 minutes. Chop them to medium sized pieces and keep them aside ready.

** Peel off the outer skin of both garlic and onions and chop them to small pieces. Keep them also ready aside separately.

** Wash, wipe dry and finely chop the green chillies and keep it aside ready. Grate coconut if using for garnishing (optional).

** Heat coconut oil or any other edible oil of your choice, when hot add garlic pieces and fry for a few minutes until color changes lightly.

** Add in chopped onion along with green chilly pieces and continue frying for a few minutes until the onions turn translucent.

** Add turmeric powder, fry for a few seconds and then add chopped moringa leaves. Stir fry mixing well on medium heat for 2-3 mins.

** Lower the heat, cover and let cook on medium heat stirring well in between a few times, sprinkling water in between only if necessary.

** When cooked soft add jaggery powder/ gratings, salt to taste and mix well. Cover and continue to cook until well mashed and done.

** Note : Moringa Leaves are thick and stiff textured hence will take quite sometime to cook, say about 15-20 minutes so be patient

** When cooked and well blended garnish with grated coconut, mix well, cover and cook only for 2-3 minutes and its done.

** Note : I have not added coconut gratings for personal reasons, however it tastes great if done so, so plz. do add them on.

** “Mashinga Palle Upkari (Moringa/ Drumstick Leaves Stir- fry)” is done and ready to be served. A simple upkari/ bhaji/ stir-fry that tastes best served as a side dish with dal- chawal during meals. Try adding on moringa leaves atleast once in 15 days to your meals for health benefits, they have plenty of medicinal properties. Make it a habit to serve them to children from young age to develop the taste. It is available in Mumbai during monsoon and I definitely make the most of it by preparing different types of dishes. Do try this simple bhaji and enjoy with family and friends.
