Ambuli- Piyava Pachodi (Raw Mango Onion Salad).

"Ambuli- Piyava Pachodi (Raw Mango Onion Salad)" ... teekhi amshi pachodi is loved by one and all ... go ahead and try it out if you have not yet prepared it, tastes great to relish on as it is with some hot beverages … Yummilicious …

** Almost everybody prepares this chatpata dish when raw mangoes are in season ... there was a time when I used to have this almost daily at mid morning break ... but then sometimes if the ambuli is too amshe'/ tart then dantaka shinnn jatta (it tingles at the tooth) ... Naive ??? I am sure all have experienced this ... but then we love it, so we want to eat it too ... just add on some finely chopped onions and then you will have no issues ... you can then relish it to your heart’s content ... So, just go ahead and bring those Raw Mangoes/ Ambuli home.

** There is no recipe as such for this dish, you just add in assorted grated veggies you wish to add on, spice it up and it’s done. I kept it simple, I have used finely chopped raw mangoes and onions in the same proportion 1:1 ratio. I have not sliced off the outer skin of the raw mangoes, you may do so if you wish as some do not like it, in my home we prefer to keep it on. Put both chopped onion and raw mangoes in a bowl. Add in required amount of sambar powder as per individual liking, salt to taste and a tablespoon of coconut oil. Toss all together well, so that the spices are coated well on all pieces and then “serve it immediately”.

** Note : You can add on grated carrots, beetroot, cucumber, radish etc. or any other salad variety veggie of your choice too, I add corn kernels at times too. Do garnish with coriander leaves, I did not have them at home and it was raining heavily so I decided against venturing out, just for the sake of the same. Usually we do not temper/ season this salad and only raw coconut oil is added but you may do so if you like, but then do not add oil. I would also like to mention here that coconut oil tastes the best for pachodi, so use it if possible.
