** Here is a simple raw salad prepared using sprouted green grams and cabbage that tastes great when served as a side dish along with other dishes in thali or otherwise too. Healthy salads have made in way into our kitchen today and it is really healthy to have a handful on daily basis. Sprouts are high in protein so they give boost to immunity while cabbage is almost nil in calories and is great in keeping control over body weight. The recipe is simple and nothing exorbitant so enjoy this one as and when possible as it is a storehouse of nutrients. ** Here is my simple recipe for "Kirlailele Moogu ani Cabbage Koshimbir/ Sprouted Green Gram and Cabbage Salad" .... My Style ....
** Wash and finely chop about 2 heaped cups of cabbage into smal pieces. Put this in a bowl. Rinse and pat dry with a dry cloth about 1 cup of kirlailele moogu ie sprouted green gram and add it to the cabbage pieces in the bowl. Add in 3-4 finely chopped green chillies (+/- depending upon individual spice level), salt to taste and half freshly squeezed lemon juice.
** Heat 1 tsp of coconut oil (you can use any other oil of your choice too) when hot add in a large pinch of asafoetida/hing powder and add this to the ingredients in the bowl. You can add in Mustard seeds and Curry Leaves if desired too, I have not as somehow with this particular salad it does not go well. This one taste best raw with dash of spices only. Toss all well together and garnish with a tablespoon of finely chopped coriander leaves.
** "Kirlailele Moogu ani Cabbage Koshimbir/ Sprouted Green Gram and Cabbage Salad" is done and ready to be served. I served it with other dishes in my thali meal, you can choose to serve it anyway you desire. Enjoy this healthy raw veggie and sprout salad with your family and friends. If you want to serve it after a few hours, you can mix them all and keep it in fridge. Just leave out salt and lemon juice and add them just before serving for best taste.
