Homemade Spiced Butter Spread~1.


“Homemade Spiced Butter Spread~1" applied on tava fried bread (Bombay Pav) slices … Now there is no need to buy those spiced / seasoned butter spreads … you can make them at home as per your taste/liking and that of your family and kids … here is a simple one with homemade chutney powder … tastes simply awesome spread on fried/toasted bread slices or even Idly fries … Utterly Butterly Delicious … Yummilicious .... 

** I have been preparing "Homemade Spiced Butter Spread" for a very long time now even before it came into the market. I always wondered why it was not commercially available as it was not only tasty but easy and a necessity too. After marriage and settling in Mumbai about 30 years back I learnt a lot of quick and easy meals, many with short cuts as it was precisely within a year of my marriage that hubby and me went into business together. I was always running short of time and at the same time wanted to eat something tasty. After settling in my new home after about 6 yrs into marriage, I got busier with added on responsibilities and it was at that time when I went to visit an old aunt of ours, she served us bread to which she had applied a layer of butter and sprinkled some gun powder / molgai podi over it. It tasted delicious and on my way back home my hubby to confirmed that it was indeed tasty, but he felt the hitch was one had to eat carefully or had to make a sandwich of the same lest the powder falls on our body. 

** I prepared it often as it was easy and the ingredients were always available in the kitchen. I was careful and always prepared it in sandwich form to avoid mess. I have always tried to find solutions to any problem I come across in cooking of food and this was always at the back of my mind. One day while I was removing the butter after churning it, out of the blue the Idea suddenly cropped up in my mind. Those days except for books there was no internet source to check on if there were similar recipe or so, or if I could find some help if any. I queried about but no one knew anything about it. Hubby as usually is very helpful and always encourages me to think out of the box, try out new things, specially if it cuts down on time. After a brief thought I just took out some of the butter and mixed some of the chutney powder prepared by me at home to it and mixed well. I did not get a very smooth texture, but I was excited that I could easily apply it on bread and that there was no mess of the powder getting dropped. 

** After a few trials and experiments I came up with my own variation of preparing butter spreads and have been doing so for at least over 2 decades now. I have lot of varieties in which I prepare, well frankly putting I have no recipe as such, whatever catches my fancy I add it on and prepare the butter in a small box of say 200 gms and keep it in freezer for use. Once that is over, I try out something different, like at times garlic, herbs etc. This one is the most favorite in my home as it is very spicy and my hubby is a spice lover, while I am somehow reluctant to have spicy dishes. But the problem gets solved for me when I spread it over half of the bread portion and then just fold it over, easy isn’t it? that way the spice and butter level both are cut down to minimum. Well, try this out with your own variations, Coz. for an innovative mind there is actually no boundaries on thoughts. So go for it, you can also prepare them as per individual liking's in your home and freeze the same. 

** Note : I have used Amul Butter this time for preparation of this particular spread, you can use any other trusted brand or homemade fresh butter too, just be careful with salt addition as store bought butter if not white butter has added on salt. 


** Here is my very simple method of preparation of "Homemade Spiced Butter Spread~1." ... My Style .... 

** Bring about 100 gms of butter to room temperature. It should get softened and you should be able to spread it on bread with a bread knife or spoon. Put it in a glass bowl and keep mixing till it is softened well and is smooth without lumps. Add in about 1 tblsp of ghee or coconut oil or any oil of your choice and further mix it into the butter well. This is a very necessary step to make a smooth spread. I prefer adding ghee and I have always added on the same with the exception of a few times. So preferable use ghee and homemade if possible. 

** Now add in 3-4 tblsp (+/- depending upon individual taste) of any chutney powder to the mixture and further mix well till all the ingredients have mixed in and blended well. DO NOT add salt if using store bought yellow butter which has already the inclusion of salt and so does the chutney powder. But is using white homemade butter, then you may have to add in a little bit, but do check before adding the same. 

** Put the prepared butter spread in an airtight box and put it in the freezer. Simple Isn’t it, you have your own butter spread the way you like it ready as and when required. Just remove the butter about 15 minutes before you need to spread it on bread. It would be great if you could spare 30 minutes in which time you will get a real soft textured butter spread all ready and nice to be spread. 


** “Homemade Spiced Butter Spread~1.” is done and ready. You can apply this on bread toast or tava fried bread slices. You can also spread this on chapati, Idly, fried Idly, dosa etc. too. I sometime apply them on creme crackers biscuit and enjoy them during dinner time with some hot steaming soup. The choice is immense, you can also carry it while you have to travel for a few hours, just apply them to bread slices and place it like sandwiches with the spread side within and then just pack it and its ready. 

** I will be adding many more bread spreads, In different varieties very soon. Somehow it never struck to me to add this one in the Blog. Many a times it so happens that some of the most frequently prepared dishes in our home are taken into consideration as commonly known to all and feel there is nothing to blog it on. But when my friend rang me about a month back asking me for the link, I was surprised and told here, I had never thought of doing it. I must thank her for reminding me that it would be helpful to many specially present generation who are always on the move and hardly find the time to cook. 

** I have used my own chutney powder here, you can use any powder or any spices that you like to be added on to your sandwiches. At present I will just share a few tips, to give you a rough Idea, but do keep a keen watch as I will be posting them often, maybe once in a month or in two months depending upon how fast my batch of butter spread gets over. So till then, you can add on garlic powder, ginger powder, sambar powder, chilly flakes, coarsely powdered pepper etc. If you have any other spice powder that you like very much you can prepare with the same too. 

** I have added on this particular chutney powder which I had prepared about a month back, it is very healthy as it contains about 10 lovely ingredients in it and I have also named it “10 in 1~ Dry Chutney Powder” ... ** Note : A simple Caution : Always remember to use a clean spoon while removing the required amount of butter for spreading on the bread. Again do not use the same spoon that you have used to spread the bread and again to dip to remove more butter. Many a times people do so, that should be avoided as when you spread the butter on bread tiny bread particles stick to the bread knife or spoon and if you dip the same spoon into the butter spread bottle it may get into the bulk and the same may turn into fungus. So BE VERY CAREFUL WITH BUTTER SPREAD KNIFE. 


** Preparation of "Homemade Spiced Butter Spread~1, applied on Tava Fried Brea (Bombay Pav) Slices" .... You can use any bread slices you want to spread the spiced butter with. You may also leave out the tava frying step if need be, many a times I use the spread on just fresh bread as it specially if it is Brun / Kadak Pav. Here I have used Bombay Laddi Pav a bread famous in Mumbai served specially as Vada Pav or Pav Bhaji. I am sure all of you have come across these two dishes and are familiar with it. 

** Procedure : Just slice the Pav into 3 pieces out of each pav. Apply butter / ghee sparingly on both sides and fry on hot non stick tava till crisp and evenly browned on top. Be careful and do not burn the bread. Burnt bread are distasteful. Now apply the spread immediately on the hot tava fried bread / pav slices. They will melt slightly and give a lovely graze to the bread and tastes awesome when you bite on it. When the butter just about melts on hot bread it is really very tasty to relish and here you have the added bonus of spiced powder to tingle the taste buds. Do try this out and enjoy with your family and friends. Children are sure to love it, specially teenagers who are very fussy on eating habits, but for sure will love this one.
