Khus Khus (Poppy Seeds)-Kaju (Cashew Apple Fruit) Payasam.


"Khus Khus-Kaju Payasam/Poppy Seeds-Cashew Apple Fruit Dessert topped with Almond Slivers" ... Tried my own concoction for today's Naivedyam on the auspicious occasion of "Hanuman Jayanthi" ... sharing with all my friends here ... Stay Blessed-Spread Happiness …

** “Khus Khus Payasam or gasa gasa payasa as it is popularly known in southern parts of India is a very famous payasam / sweet dessert with addition of coconut milk that is prepared using poppy seeds. Addition of nuts to payasam is also a common way of preparing the dessert or payasam which is also served as Naivedyam to God. But bringing on innovation or adapting the same in new methods has always held topmost priority or let us say interest in my cooking methods. Though simple khus khus payasam is not included yet in my blog, today I tried out a concoction of my own by addition of ripe cashew apple fruit and it was simply amazing flavored dessert. It had been eons since I prepared khus khus payasam, may be over 2 decades as somehow preparation of payasams is much less in my home with only festive occasions/days being an exception. During those days too, I end up preparing that which is traditionally prepared for the festive, so this particular payasam never really saw the day. Well today being Hanuman Jayanthi, decided to prepare something different. Cashew Apple fruits were also there in my fridge, so tried them both in combo. Do try out this delicious aromatic payasam, it really tastes awesome, in my home it was appreciated a lot. 

** Here is the simple method of preparing "Khus Khus-Kaju Payasam/Poppy Seeds-Cashew Apple Fruit Dessert topped with Almond Slivers" … My Style ….. 

** Add ½ cup of khus khus/cus cus/poppy seeds in a dry tawa/kadai/pan along with ¼ cup of coarsely powdered almonds and roast on low heat for sometime till its gives out a lovely aroma and turns slightly in color, remove and allow to cool completely. 

** Note : You can also use microwave method for roasted the same. Just put in glassware dish and run on high for 1 minute, mix well and again run for another minute. Once again mix well and run the mw for another minute and then allow to get completely cooled. 

** Wash and wipe one large sized ripe cashew apple fruit. Cut into small cubes and cook either in a small pan with half a cup of water or put it in a glassware dish add about 2-3 tblsp of water and microwave for 2-3 minutes. Allow to cool completely and keep it ready. 

** Add in the cooled khus khus-almond mixture into a mixer grinder and grind to a very smooth paste with water. Do not add water in one go, keep adding little by little and grinding the same till smooth. Add in the cooked and cooled cashew apple fruit and further grind all till it is very smooth in consistency. 

** Add 1-2 tblsp of pure cow’s ghee in a thick bottomed kadai and bring to heat, add in the ground paste and fry for a minute or two on medium heat stirring continuously. Now add in 2 cups of water and bring to a boil and then add in about 150 gms of grated or cut into small pieces of jaggery and mix well till it melt. 

** Note : We get good clean jaggery that has no dirt particles whatsoever in Mumbai, so we can use the same directly when cooking. But in case it is not so in your vicinity, you need to melt the same in some water and sieve before using. 

** Cook till it thickens well on medium heat stirring often to avoid it getting stuck to the bottom. Now add in 1 cup of coconut milk and mix well and cook further till desired consistency. Lastly add in 1 tsp of cardamom powder and ¼ cup of almond slivers and mix well. Remove and allow to slightly cool and it is done.

You can serve this warm or at room temperature too, it tastes great.
