My Delicious Veg. Thali No~ 399.


“My Delicious Veg. Thali No~ 399 : Taushe (Cucumber) Slices, Kulitha Talsani/ Upkari (Horse Gram Bhaji), Varai- Chana Dal- Cabbage- Piyava Sanna Khotto (Indian Barnyard Millet- Bengal Gram Dal- Cabbage- Onion Spiced Idly), Kulitha Saaru (Horse Gram Saar), SheetHa (Rice) topped with Loni (Butter)” … in GSB Konkani Saraswat Cuisine, certain pulses are earmarked as per days, like kulith on Saturday, chana on Friday etc. though over years the pattern is not followed much, there are times when we love to revisit those golden days and I am sure most of my friends will agree … sharing today’s meal of kulitha upkari- saaru with a generous blob of loni which Amma always insisted on serving to avoid body heat … Yummilicious .....

** I have written all I have to say on the title as well as my previous posts of kulith (horse gram) about our love for this dish. “Kulith (Horse Gram) Upkari and Saar” as mentioned above was always prepared by our ancestors on Saturdays. I have absolutely no idea why our ancestors made it a point of preparing certain grams/ pulses on certain days, but my guess is that by doing so they kept in circulation each gram/ pulse for a day so that the family would gain maximum benefit of nutrients as each one is unique in its own way, Isn't that fantastic ?? we really should be thankful for such forethought's and knowledge, instead we in our ignorance have shunned all good practices and traditions handed over to us down the generations, hopefully we will continue doing so in future.

** Try following at least some of the traditions, if not all as they were  implemented for our own benefits, just jog down on your memory and you will notice that our ancestors far outlived a good healthy life than present generation. As for kulith it is a little bit heat producing to body which can be sorted out by serving it with a blob of fresh homemade Cow’s milk butter or if not available then atleast ghee/ toop. Do try it, tastes wonderful served steaming hot with rice along with the upkari/ bhaji prepared with same pulse. Add on some fried papads or any other dishes to complete the meal depending upon your family preference and you have a wonderful meal. I have relished it this way throughout my childhood and even now I enjoy it the same way, its fantastic and healthy too.

** Some traditional dishes are so heartwarming that I prepare them often as we love them and kulitha saar with with upkari is one of them, though this time I am preparing them after a long time. Again sanna khotto too is our favourite and this time I prepared with Varai, though you can substitute it with rice if need be. It tastes awesome served with this saar and we really enjoyed the meal. As I have already shared the recipes before I am sharing links to them below as is my practice with all thali posts. There are plenty of combo meals and thali post from which you may follow if desired or try out your own mix and match combinations if need be, depending upon your family preferences and enjoy them with your family and friends.
