Chilled Karmbala (Star Fruit) Kadhi.


“Chilled Karmbala (Star Fruit) Kadhi” … a delicious coconut milk based garlic flavored spiced digestive drink served during meals … why should kokum have all the fun, isn’t it? there are plenty of tart fruits that are equally nutritious with medicinal values that can be tried similarly … Star Fruit is available all round the world, do try this kadhi, it tastes awesome, you can sip it chilled as it is or serve it with spiced khichidi/ plain rice during meals too … Yummilicious …

** There are different types of kadhi, cooked or prepared as it is. While besan kadhi is cooked and served with meals sol kadhi is prepared with semi dried kokum petals and prepared with freshly squeezed coconut milk along with spices like garlic, green chillies, jeera etc. The base of a good tasty “Kadhi” is prepared with tart taste fruits/ veggies and coconut milk along with spices as mentioned, so tried out this one with star fruit, a fruit that has immense health benefits which you will find on net. ** Here is my simple recipe for “Chilled Karmbala (Star Fruit) Kadhi” … my style, its nutritious and delicious, do give it a try ….


** Add 2 cups of freshly grated white part of coconut (soyi/ nariyal) in a bowl along with 3 cups of hot water. Cover, let it rest for 30 minutes. Add into a mixer grinder and grind to a very fine paste adding more water if necessary only. Remove and strain using a fine clean cotton cloth (for best results). Collect the remnants, put it in mixer along with water and once again grind well and strain as mentioned above. Collect the obtained coconut milk/ narla rosu and keep it aside separately to be used later.

** Wash, wipe dry 4-5 karmbala (carmbola/ star fruit), slice off both side ends off fruit and then cut into small pieces. Put in a bowl with one cup of water and cook till soft and done, you can pressure cook to one whistle or microwave for 5-6 minutes too, whichever is convenient to you. Remove and let cool down completely.

** Add cooked- cooled karmbala pieces in mixer grinder along with the water it is cooked in, 4-5 garlic cloves (losun/ lehsun) peeled- cut to pieces, 5-6 green chillies (tarni mirsanga/ hari mirchi) cut to pieces (+/- depending upon individual taste), 1 tblsp of roasted jeera (cumin seeds), handful of fresh curry leaves (karbevu/ kadipatta)- optional and grind to a fine paste adding more water only if required.

** Remove and sieve through a very fine sieve or cloth (for best results) into a vessel. Now collect sieved residue and add it back into mixer grinder and once again grind to a paste with required amount of water. Again, sieve it as before and once more collect the residue, grind, sieve and collect in the vessel.

** Note : Grinding repeatedly 2-3 times using sieved residue helps in bringing out maximum juice from the ingredients without wastage.

** Add prepared coconut milk/ narla rosu to the above along with kala namak (Black/ Pink salt) to taste and mix well. Add more water as required; however avoid making it too thin in texture, as it will lose out on taste. The consistency should be that of fresh thick cow’s milk for a pleasant sipping on to it when served chilled. Mix well and keep it in fridge for atleast 2-3 hours before serving during meals.

** Note : You can garnish with handful of finely chopped coriander leaves (kottambari pallo/ dhania). You can also add in a dash of freshly squeezed lemon/ limbiya juice or serve a wedge if desired just before serving.

** “Chilled Karmbala (Star Fruit) Kadhi” is done and ready to be served. This is a digestive Coconut Milk based appetizer with inclusion of fresh Karmbala/ Star Fruit that goes well served with Indian spicy cuisines.
