** Here is my recipe for “Coriander- Fresh Turmeric- Ginger- Gooseberry- Coconut Chutney (Kottambari Pallo- Tarne Haldi mande- Alle’- Avalo- Soyi ghalnu Chutney)” … in my own style, sort of a immunity booster, healthy type of chutney …
** Ingredients :
Fresh Coriander Leaves/ Kothimbari Pallo/ Dhania : 1 cup
Coconut/ Soyi/ Nariyal : ½ cup freshly grated.
Green Chillies/ Tarni Mirsanga/ Hari Mirchi : 8-10 less spicy one’s
Ginger/ Alle’/ Adrak : 1 inch piece.
Fresh Turmeric Root/ Kacchi Haldi/ Amba Haldi/ Tarne Haldi Mande : 2x 3 inch piece.
Fresh Gooseberry/ Avalo/ Amla: 2 large sized.
Kala Namak/ Meeta/ Salt : to taste
** Pick, clean, wash and put the coriander leaves in a colander to drain off all excess water. You can use tender stalks of coriander leaves too. Once drained well, roughly chop them into well and keep it ready aside.
** Wash, wipe dry and chop turmeric root, ginger and green chilly to pieces. I have used less spicy variety of green chillies, if using spicy one’s you can reduce or increase in case of using any other ones as per individual taste.
** Wash and wipe dry the amla and cut the edible portion into pieces discarding the inner seed. In case amla is not available you can add a small marble sized piece of turmeric or use star fruit, bimbul or add on some lemon juice too.
** Add all the cut pieces of turmeric root, ginger, green chillies, coconut, amla, into a mixer grinder and grind to a very smooth paste with about ½ cup of boiled and cooled water. Remove it into a wide bowl and keep it aside.
** Now add in the cleaned and roughly chopped coriander leaves into the mixer grinder and just grind it coarsely to a crushed sort of texture using pulse mode. Remove and add to the paste in bowl along with salt and mix well.
** Remove the prepared chutney into a air tight box, check consistency and add more water only if required, the chutney should be kept thick textured to enable easy application, you can always add in water later if need be.
** “Coriander- Fresh Turmeric- Ginger- Gooseberry- Coconut Chutney (Kottambari Pallo- Tarne Haldi mande- Alle’- Avalo- Soyi ghalnu Chutney)” is done and ready to be served as side with any dishes of your choice.
** I personally found that this chutney tasted great when used in preparation of simple sandwiches. I also it served with rulava (rava) bhakri and Idly too. Store chutney immediately in fridge for a shelf life of about 2-3 days
** This chutney also tastes great served with cutlet, samosa or our own Goli bojos/ biscuit ambado too. Definitely spoiled for many choice which is sure to be relished well by your family, so do go for this immunity booster chutney.
** Note : You can add coriander leaves along with other ingredients while grinding to get a smooth evenly ground paste too. I used this method for the effect of coriander leaves pieces seen in the chutney which to me looks so beautiful, You may use any method you like as the taste does not differ.
** Note : Do not add the lower grated portion coconut near to the shell. Always use only the topmost fresh white portion for preparing of chutney as using only white portion will retain the chutney color and the taste too.
** Note : Do not use too much of lemon juice, tamarind, amla or any ingredient used to bring in tartness to the chutney, as it will not taste good, also as per Ayurveda, you should just add a pinch of tartness and not go overboard.
** Note: You can increase or decrease green chilly depending upon individual spice level. You can also add dried red chilly instead of green chilly or both in proportion, just remember to add them while grinding.
** Note : You can add in a few cloves of garlic too, it tastes wonderful, I do at times, however as I store it for a few days, it becomes difficult for consumption on NO GARLIC days, so these days I do the same when needed immediately only.
