Dudhya~Bimbla Gojju / Pumpkin~Tree Sorrel Gojju

"Khatta~MeetHa Dudhya~Bimbla Gojju / Pumpkin~Tree Sorrel Gojju" ... A little bit of gojju as a side dish is very Tantalizing and makes the lunch that much more appealing ... Try this simple gojju prepared with yellow pumpkin and bimbul … Yummilicious ….

** Gojju is a famous side dish among Indians each one having their own method of preparation. The names are different like gojju / bajji / bharta etc. but in all they are almost the same and are served along with other dishes during lunch/dinner time. I love my gojju prepared khatta meetHa teekHa (tangy~sweet~spicy) and I am always in the lookout for more combinations and variations in the same. When my friend Nita Pai posted this dish in Konkani Delicacies .. My food group, I was instantly attracted towards it. I had never to date prepared gojju out of yellow pumpkin and was eager to try out the same. Nita’s recipe does not include tanginess and as my husband likes it always slightly with khattapan (tartness) I added on Tree Sorrel (Bimbul) along with pumpkin and the gojju turned out simply delicious. The rest of the recipe is same, except that I have garnished with some coriander leaves too. In all a yummy dish and the recipe credit here goes to Nita Pai, Thanks dear we simply loved it.

Coconut : 1 tblsp freshly grated.
Salt to taste

** For Tempering :
Coconut Oil : 1 tblsp (You can use any edible oil)
Urad Dal / Black Gram Dal : ½ tsp
Mustard Seeds / Rai / Sasam : 1 tsp
Hing / Asafoetida Powder : 1 tsp
Dry Red Chilly / Sukki Mirsanga : 1-2
Curry Leaves / Kadi Patta / Karbev : 6-8

** Peel off the outer skin and clean of the innermost seeds and threads attached to it o the yellow pumpkin. Chop them into large pieces. Rinse and add them in a vessel along with bimbul / tree sorrel and Steam or pressure cook till done. I cooked them in microwave together for 4 minutes. You can use any method.

** Allow the pumpkin to completely cool and them mash it well with hands or a potato masher. Add in the grated jaggery, salt to taste, finely chopped green chillies and mix well. Add water only if necessary to bring the gojju to desired consistency. However, do not make it too thin, gojju should always remain thick.

** For Tempering : Heat oil in a small pan, when hot lower the heat and add in the urad dal, when the color changes slightly add in the mustard seeds and when they begin to splutter add in the curry leaves and hing powder. Add in the red chilly cut into pieces and fry for a second and pour over the gojju.

** Garnish the gojju with the finely chopped coriander leaves and freshly grated coconut. Cover and keep aside for 5 minutes. Mix well and keep it in fridge if not serving immediately.
