Cauliflower~Fresh Methi Leaves~Tree Sorrel Bhutti.


“Cauliflower~Fresh Methi Leaves~Tree Sorrel (Bimbul) Bhutti”... A tasty and delicious semi dry side dish / curry from Konkani Saraswats Cuisine that goes very well with paratha, roti, chapati or even our very own Dalitoy-Sheetha (Rice) ... Yummy Yumz … 

** Cauliflower~Onion Bhutti is a semi spicy thick masala gravy that is a common dish served as side dish in GSB Konkani Saraswat Cusine. This dish tastes best when served with chapatti / parota / roti / poori. You can prepare the same with different veggies too though the most famous one is with tendle ie Ivy gourds or cabbage along with onions. I have posted the tendle / Ivy gourd one before and also of breakfruit / jeevi kadgi and some other combos too. Do use the search option for the same. As it’s the season of fresh Methi Leaves, for a twist I prepared the bhutti with cauliflower along with the addition of fresh methi leaves and tree sorrel (Bimbil / bimbli). And trust me it does not taste bitter at all if that is what worries you. It’s a misconception people have of methi leaves that they are very bitter, once you include them you will simply love them. Also, Methi leaves are a store house of healthy Vit. And minerals that should be included into our diet specially during winter. So try as many dishes as possible of the same as they are available in plenty now. 

** Bhutti is the most famous of all dishes in our community and is prepared very often as children also love it with roti or poori. Seasoning of the same also differs from place to place while some add in Mustard Seeds and Curry leaves as seasoning some do not. I prepare them with variations, sometimes I add or sometimes I season the same with onions. This dish is usually served for lunch as a side dish with Dal-chawal / Roti. The gravy is ground a little bit coarse and is a semi dry dish. You can use any sour type of veggies to add in tartness to the curry. You can use hogplums (ambado), Star fruit (Karmbal), Tree Sorrel (Bimbul), Raw Mangoes, when in season or just add in tamarind, which while grinding the masala. You can use any way you choose. Here I have added frozen tree sorrel / bimbul which my sister had passed on a few months back. I had frozen them in my freezer and use to those dishes, which taste awesome with its addition. Try this dish and I assure you 100% you will want to have more of it. So just go ahead and enjoy them with parota/roti/poori or Dal-chawal. 

** Ingredients : 
Cauliflower Florets : About 3 cups cut into smaller size florets. 
Onion : 3 large sized cut into small sized pieces. 
Fresh Methi / Fenugreek Leaves : 2 cups picked, cleaned and finely chopped. 
Tree Sorrel / Bimbul : 3-4 large sized. 
Mustard Seeds / Rai / Sasam : 1 tsp 
Curry Leaves / Karbev / Kadipatta : 8-10 
Oil : 2-3 tblsp 
Salt to taste 

** Masala to be Ground : 
Coconut : 2 cups freshly grated. 
Dhania / Coriander seeds : 3 tblsp 
Red Chilly Powder : 2 tblsp 
Tamarind : a small marble sized if not using any souring fruits only otherwise leave this out. 

** Pick, clean and wash well the methi leaves. Let out all excess water by patting them dry with a thick towel. Chop finely and keep it aside ready. For this particular dish if there is a little bit of water that clings to the leaves its ok as we are going to cook the same. Keep this ready aside. 

** Note : Apply a little bit of salt to the methi leaves and rub it all over and leave aside for 10 minutes. Squeeze of the water from methi leaves properly, wash and keep this aside ready. This is done to remove the bitterness from methi leaves. You can leave out this step and just wash and keep the leaves ready if liked. I personally do not follow the salt method as I strongly believe that it should be consumed as it is for its awesome health properties. You may choose any method. 

** Wash and keep ready the cauliflower florets in a colander. Let the excess water drain off completely. Also peel off the outer skin and chop the onions into small pieces. Do not cut them to very fine. Just, say about ½ inch pieces are enough. 

** Wash and slice off the sides of the tree sorrel / bimbul if you are using the same. Cut them horizontally into 3 pieces if large and 2 pieces if small. Keep it ready aside too. 

** For Grinding the Masala : Add the freshly grated coconut, chilly powder, coriander seeds and tamarind (if using tamarind only or else leave it out) into a mixer grinder and grind it to a paste with very just enough water. Do not make the paste very smooth or very thin, but at the same time, it should not be very coarse too. The masala should be very thick and not of thinner consistency. 

** Heat the oil in a thick bottomed kadai. When hot add in mustard seeds and when they begin to splutter add the fresh curry leaves. Fry for a minute or two. Now add in the cubed onions and further fry till translucent, say for about 4-5 minutes. Add in the cauliflower florets and mix well. Sprinkle some water, cover and cook on lower heat till 50% done. 

** Once the cauliflower is cooked to 50% add in the methi leaves prepared and kept aside and mix well. Sprinkle some water if necessary and cook covered till both cauliflower and methi leaves are almost done. Add in the tree sorrel / bimbul pieces and mix well and cook for just 2 minutes. 

** Now add in the ground masala, salt to taste and mix well. Add water if necessary. Cover and cook till the masala gives out sort of bubbles on top. Keep mixing gently often to avoid the masala getting burnt at the bottom as it is thick in consistency. When good bubbles appear consider the curry is done. Remove from heat and keep it covered aside for 20-30 minutes for the curry to get settled in with the flavors. 

** “Cauliflower~Fresh Methi Leaves~Tree Sorrel (Bimbul) Bhutti” is done and ready to be served. Though we GSB’s serve it as a side dish with Dalitoy ~Rice, it tastes much more delicious with Chapati / Roti / Poori etc. You can serve the same with panpolo too, simply tastes awesome. I however served it with dal-chawal and poori. Do try this out and enjoy with your family and friends. Children usually like this dish has it does have a appealing taste.
