Here is a unique combination of Ice Cream ......... Banana Ice Cream Topped With Jambul / Black Plum Sauce And roasted Nuts Served along with Split Fresh Ellaichi Banana ......
I have already posted the recipe of Banana Icre Cream before. I have made a little bit of changes here and prepared it without addition of milkmaid like the previous one. This method of Banana Ice Cream is the easiest of all Ice Cream’s I have ever made. The Ice Cream really turns out great, soft in texture and full of banana flavour. I made Jambul / Black Plum Sauce to top the Ice Cream and have also added little bit to the Ice cream. Served it with split banana and some roasted nuts.
Preparation of Banana Ice Cream 2nd Method : Peel off the skin of 3 large sized bananas and chop them to pieces. You should have about 3-4 cups of them. Put them in the jar of mixer / blender with 200 ml of milk cream, ½ cup of milk powder and 1 cup of sugar and run the mixer till the mixture is smooth. and blend all together till well blended.
Remove and pour in an air tight container and put it in the freezer for 2 hours. Remove and once again beat the mixture well to remove the water crystals if any. Off course there wont be any, but then it will give you a smoother texture. Put it back in the freezer and leave it there overnight.
To prepare the Jambul / Black Plum Syrup : Remove the fleshly portion of about 10-12 fruits and discard the seed. Grind it to a smooth paste with ½ cup of water and strain through a fine sieve. Put this in a kadai along with ½ cup of sugar and keep stirring well. Mix ¼ tsp of cornflour in ½ cup of water, see to it that there are no lumps and the mixture is smooth. Add this to the pulp and keep stirring till it thickens. Remove from fire and let cool in the fridge completely overnight.
Next day remove the banana ice cream and beat is with a fork add in 2-3 tblsp of plum sauce and just give it a swirl or two. The pulp should not get completely mixed with the banana ice cream but just get added like rainbow cake. Smoothen the top surface and put it in the freezer for another 3-4 hours.
For Serving: While serving remove the Banana Ice Cream with Jambul and keep it aside for 5-10 minutes. You will then be able to remove it into a nice scoop. Meanwhile cut a fresh small banana into two length wise, Its called split banana. I used illaichi variety banana. Now put 2-3 scoops of the Ice Cream in a oval shaped flat bowl and add in the banana splits on the sides. Now top it with jambul / black jamun sauce and sprinkle some roasted nuts prepared before hand. Serve immediately.
