Coriander Curry Leaves Dry Fruit Chutney ........... A Chutney that goes very well with any dish even Tandoori ........ and best with Sandwich.
Coriander leaves Chutney is common in every house hold. To make this more healthful and tasty I have often made many changes in the recipe by adding whatever is available at the moment in the kitchen. I have already posted a chutney with dry fruits. This one is on similar lines too. This chutney goes very well for sandwich, tandoori or for that matter even Idly, dosa or bajia.
For the preparation of chutney : Grind to a fine paste ½ cup freshly grated coconut with 5 green chillies, 1 inch piece of ginger, 10-12 garlic chopped fine, ½ cup of cashew nuts, ¼ cup of raisins, 15-20 fresh curry leaves and 4 cups of finely chopped coriander leaves.
Remove add salt to taste and freshly squeezed one large lemon juice. Add water if necessary to get a smooth paste that can be evenly applied on bread slices.
The chutney is ready to be served with any dish you desire. Best served as Sandwich Chutney and along with any Tandoori Items.
Note: You can also add ½ cup of fresh pudina leaves to this chutney while grinding to paste.
