Sprouted Moth Beans~South Indian Cucumber ~Cashew Nuts Curry.


"Kirlailele Matki (Sana Bagado)~Magge~Bibbo ghalnu Ambat/Sprouted Moth Beans~South Indian Cucumber~Cashew Nuts Curry" ... The traditional Konkani Saraswat dish is prepared with sprouted bagdo ... I prepared the same today with sprouted moth beans for a change as matki and bagdo are similar, but for the size ... tastes awesome when served with rice ... Yummilicious ….. 

** This is one of my favorite curry which we call Ambat in Konkani Saraswat Cuisine and is prepared using sprouted Bagado (Konkani name). Bagado is similar in nature to matki as in hindi and Moth beans in English, but the same is larger in size, almost 5 times the size of matki. Bagdo is freely available in southern parts of India and in my home town Mangalore, while it is not so in Mumbai. Matki ie Moth beans are freely available and I prepare this curry with the same. The best part of using sprouted moth beans than bagdo is the skin of moth beans are not removed after sprouting where as for bagado it is tedious work to sit and remove the same. The taste is almost the same and yes much faster method in cooking. I have already posted the recipe in detail of this recipe in same combo before with just difference in addition of hogplum. Hogplum are available only during first 2 months of monsoon and when you want to prepare this curry during other season, you have to do so with addition of either bimbul/tree sorrel fruit or tamarind. Tamarind in added while grinding the masala which I have mentioned of in the prior post. So I request all those of you who want to check out on the recipe to do so by following the link given below. This post is made only as to get a glance of the same dish without the addition of ambado/hogplum for those who are interested in the same or for those who do not have access to ambado. The taste of the dish slightly differs with addition of hogplum as there the tartness to the dish is got from fruit and for this one from tamarind, other than that there is absolutely no change whatsoever in the dish. Try out the dish as Moth beans are available easily and I have also included the sprouting method of beans in my prior post if you are not sure of the procedure. Try it, sure to love the dish if you like Amchi dishes which taste great when served with rice.
